I haven’t said much about our fall schedule lately beyond writing down what it would ideally look like. Now, after three solid weeks in, I’ve learned a few things. First, there is no such thing as a “normal” week. Sure, we have repeating activities, but every week has an extra twist or turn that keeps us on our toes. Second, meal planning is my best friend. I honestly don’t know how families do life without it. Third, slow cookers are proof that God loves us and wants us to be happy. Mondays have officially become slow cooker nights and we usually end up using it another night of the week as well.
Mondays are slow cooker nights at our house because:
1) I can make breakfast and dinner at the same time.
2) It makes the house smell incredible.
3) Mondays are packed full and knowing we will have a healthy dinner waiting for us is important to me.
However, it can be quite frustrating to buy and prep ingredients only to find a bowl of flavorless mush waiting for you at dinner. I’ve tried my fair share of crockpot flops, which is to be expected. However, there are a few I know I can always count on to be hearty and delicious time and time again. I wanted to share these with you today in case you have a slow cooker night in your house and are in need of some tried-and-true recipes that won’t let you down.
Before you dive in, make sure you have a slow cooker you can count on. Overcooking food and turning into mush can be more common with old models. Luckily you can get a great, dependable, quality CrockPot for less than $40. Or if you use it everyday and are set on getting the top of the line in all categories, you can opt for this 3-in1 option instead.
I know a lot of people swear by their Instant Pot too, so if you are looking for a one-stop-can-do-everything-shop, you may want to look into it (Christmas is coming!).

Slow Cooker Salsa Chicken Taco Slop
This recipe from Rachel Cooks might be one of the first blog recipes I ever attempted and we immediately loved it! Think of it like slow cooker salsa chicken but all amped up with extra goodness. What it lacks in aesthetic appeal, this simple pot roast will more than make up for in simplicity and taste. It’s 6 ingredients and one of those “set it and forget it” recipes I adore.

Cassie’s recipes are always so beautiful and tasty so when I saw this hearty chicken tortilla soup was made in the slow cooker, I jumped on it at once. It’s one of my favorite soups to make!
Turkey and Mushroom Bolognese Sauce
Julie’s recipes always seem to fit into my meal plan nicely because they are super tasty without being time consuming. I love that this delicious bolognese sauce can be made with almost any ground meat, so you can incorporate it into your meal plan based on whatever ground meat happens to be on sale.
Veggie-Packed Black Bean Soup
While this hearty black bean soup will take a little vegetable chopping prep and bean soaking the night before, it’s more than worth it. The recipe makes a large batch of delicious black bean soup. It is certainly enough for leftovers and I love freezing it to pull out later. Serve with some crusty bread and it’s easily a filling meal in itself.
Honey Garlic Chicken Thighs
I love the idea of chicken thighs because they are always better priced and have more flavor, but I’m never quite sure what to do with them. Linday’s honey garlic chicken thigh recipe is a great choice because it’s a complete meal in one pot (sweet potatoes and carrots too!). It’s so flavorful that you just put it over rice and viola! – dinner is served.
Paleo Crockpot Beef & Broccoli
If you like take out, stop now and bookmark this beef and broccoli recipe. To make it paleo you have to have arrowroot powder, but beyond that it is so simple and so good. Trust me, you’ll love it.

In my opinion slow cooker recipes can get very boring. But these look amazing and I am headed to print a few of them and add them to our weekly menus. Oh and also, I never plan a day of the week for a type of food, but I think I might be starting it sounds like a great idea and with a baby around the house my time is limited.
