Hello and happy Friday! How was your week? What’s in store for your weekend?
Today is supposed to turn into a beautiful day after some serious storms moved through last night. Both Hailey and Kaitlyn have soccer games so we did pizza, game, and movie night last night (Catan, of course, and The Croods 2).
We have plans to grab dinner with friends tonight, but before that I’m actually doing a photoshoot at a local boutique. I know, I know… what? I feel the same way. They reached out to ask if I’d come in after they saw the article in Lake Norman Currents (page 44) featuring my girl, Julie, and me. An afternoon of dress up sounded fun, so I’ll let you know how it goes!
Ok, let’s jump into this week’s FIVE! —-
ONE: New Lighting
It’s been a little loud around here lately. It’s been interesting trying to do school and life with constant banging on the exterior of the house, but I’m not complaining because we have the best, hard working crew and the house is looking SO good. I can’t wait to see the finished product.
On the inside we’re making a couple updates, too. While the girls and I were away in the mountains, David added bead board to the kitchen island, put in some can lights in the kitchen, switched out the kitchen chandelier, and hung the new chandelier in our entry way. He is quite the handyman and it felt great to come home to all the new changes, though I must admit I was not thrilled when he showed me the picture of how he got it all done. SMH…
TWO: Spring Goodies

THREE: Spring Books
We are in the full swing of spring right now. We are about to release our three butterflies (if you’ve never done this butterfly kit, I highly recommend it). I “potted up” (a term I just learned and hope am using correctly) our seedlings, which are doing quite well. I just transferred the bush beans and cucumbers into the garden, but am waiting a bit on the tomatoes.
To go along with all the spring things, I reserved a bunch of picture books at the library, and these were some of our favorites! The Bee Tree, The Gardener, C.R. Mudgeon, Nora’s Chicks, Compost Stew, and A Perfect Day for Digging.
FOUR: Spring Eats
Anyone else a seasonal eater? I don’t mean eating only what’s in season (though I think that’s amazing, this is not the stage of life for me to get to wander the farmers market and cook meals on the fly), but my cravings are definitely starting to change along with the weather.
Breakfasts lately have been either smoothies (berries, banana, orange, spinach, spirulina, ginger, collagen, water) or scrambled eggs with veggies (zucchini, onion, spinach topped with pickled jalapenos). I’ve made this chickpea salad quite often for lunches (great in wraps or on greens) when I’m not eating veggie bowls.
I’m excited for fresh dinners, too. Bring on the copycat Cava bowls, chicken thighs with lemon, buffalo chicken wraps, and grilled shrimp. I played around with a ranch burger this past week and while it was good, I need to punch up the flavor a bit more before it’s blog-ready, but burger bowls are my jam and I foresee a lot of them in the near future!

I tried your lasagna roll-ups recipe this week and they were so delicious. My 8 year old had three helpings! Have you ever doubled the recipe? Wondering if I should cut back the lemon zest or just double everything. Also I cheated and used canned butternut squash and it worked fine.

I’m so glad they were a hit! I use canned butternut squash, too 😉
I have doubled it before and doubled everything except for the lemon zest- I did roughly 1.5 times the lemon zest. However, I imagine a full doubling would work fine, too!
