This weekend I realized how much more fun summer is when we have when friends come to visit.
Christen and I have been best friends since we ended up a few doors down from each other in the dorms our freshmen year of college. Since then we’ve both gotten married and had two kids each- it feels like a whirlwind. Though life is really busy for us in this phase, we’ve stayed close and it means the world to me, so when it worked out that she and her fam could come visit this past weekend, I was stoked!
Having friends in town felt like a vacation, as we spent a ton of time just boating, swimming, having dive contests, drinking wine and snacking. And there were s’mores too, of course.
With all the cheese plates and wine, we decided to stick to something a little lighter for dinner- delicious grilled shrimp using my favorite simple marinade.
The best thing about this marinade is that you most likely already have all the ingredients in your pantry! Just grab the shrimp and a lemon and you’re ready to whip up this zesty and simple marinade. I love to put them on skewers and grill them up. They cook quickly and look impressive this way, but you could definitely saute them on the stove top as well.
However you choose to cook these beauties, simply serve them with some crusty bread, a green salad, and a glass of crisp summer wine. Perfect for a party or just an light and tasty dinner at home.

Simple Grilled Shrimp Marinade
- Prep Time: 2 Hours
- Cook Time: 10
- Total Time: 2 hours 10 minutes
Description

Ingredients
- 1 lb raw shrimp, peeled and deveined
- 1/2 cup olive oil
- 1 Tbsp lemon juice
- 2 garlic cloves, minced
- 1 Tbsp dried parsley
- 1 tsp dried oregano
- 1/2 tsp kosher salt
- 2 shakes of hot sauce (I use Chalupa)
Instructions
- Place all marinade ingredients in a large ziplock and mix well. Add shrimp and combine to coat.
- Let the shrimp marinate in fridge for 1-3 hours.
- When ready to grill, remove shrimp from ziplock and either skewer or use a grill pan to grill the shrimp 5 minutes per side over medium-low heat.

The times I don’t have a ton of pictures documenting what I did I know I was completely involved and enjoying the moment. Either that or too busy, ha! Love the pictures of the kids – how fun they are around the same age. Best part of my weekend was having a slumber party with my three year old niece.

It’s amazing how we don’t take full advantage of it until friends come in town. I guess that’s life though! I love when people visit because we actually get out and enjoy it!

Thanks. Loved the marinated shrimp. Made on skewers and also made skewers of fresh sliced mushrooms all on the grill. Put in Corning ware to keep warm in oven and mushrooms released juices that made a yummy sauce. Served with fresh salad, baked potatoes and candied grilled carrots.
