For those that got a giggle out of Kaitlyn’s up-all-night antics (I’m looking at you and your comment yesterday Jen! wink wink), you might be interested to know that last night went a little bit better. Down at 7:15, but up at 8:45 and it took about 20 minutes to get her back down. It scared me enough to go right to bed myself, but then it turned into a regular night of a 3:00 wake up then up at 6:30 for the day. Doable. And did I mention it was her first night in the crib? High-fives all around.
Ok, enough baby sleep mumbo jumbo, let’s get to the good stuff.
Each week at the Davidson Farmers Market, there is a King of Pops cart. I don’t usually get overly excited about ice pops, but mannnnn these are in a league all their own. Last weekend Hailey chose a PINK one (of course) which happened to be raspberry lime flavored. Incredible. I decided I had to take a stab at creating my own.
I kept the recipe simple and used frozen organic berries instead of fresh because they are only $1.99 at Harris Teeter. The process is a simple add, blend, pour and freeze set up. I guess you could add strain in there if you wanted to get ride of the seeds, but isn’t seeds in your teeth part of the fun?
These turned out quite delicious and I used popsicle molds with drip trays and straws so there wouldn’t be any messy clean up!
HA. Clearly that worked out swimmingly.
But they are pretty tasty and since it will be 97 (!!!) degrees today, I’m thinking I might just make an extra batch!
- 2½ cups Raspberries
- ¾ cup Coconut Water
- Juice of 1 Lime
- ½ tsp Lime Zest
- 2 Tbsp Agave
- Put all ingredients in a blender and blend until smooth.
- Pour into popsicle molds and freeze for a minimum of 4 hours.
- Makes 4 ice pops.
