I’ll be honest. Inspiration for this food diary post came from the fact that I really had no time to develop and photograph some of the blog topics I want to write about. Since we got back from Disney (I think that has been roughly a month now- ha!), I feel like I’ve been in a constant game of catch up. My new year’s goal for this space was to derive more content from my everyday life, so I pulled out my camera and started snapping. Long story short– here is yesterday through the eyes of my plate.
Sauteed peppers (from the freezer) and onion with a fried egg (we were out of avocado!) and watermelon. Earl Gray tea with one scoop of collagen to drink.
Though I was going to stay food focused with this post, I couldn’t help but giggle while I watched the girls so I had to snap a (poorly lit and blurry) picture of this:
My friends are helping me redecorate our living room and all these old pillows were piled up in the kitchen. The girls were so excited to turn them into “beds” while I made breakfast.
I hit up Burn in the morning for a whiteboard then we headed straight to the library to meet up with a friend.
It was a great workout (drop set each different color row 20-15-10-5 then to 40 high knees and switch to the next row).
I needed a quick snack after so I grabbed a chocolate sea salt RX Bar. I’ve tried a maple sea salt bar and could not eat it; tasted terrible to me. The blueberry was OK. The chocolate sea salt was pretty good! They remind me of a giant tootsie roll but I love the clean ingredients and added protein. I’ll buy them again.
Since it’s almost my grocery shopping day and we are low on food, I pulled a jar of Tonnino tuna fish out of the pantry for lunch. I like that it’s wild caught, low mercury, and comes in some delicious varieties.
Mixed greens, grape tomatoes, garlic caper tuna fish, carrot sticks, and plantain chips with Garlic Expressions salad dressing.
As usual, as soon as I set down my bowl, little hands wanted in on my lunch action.
I made a second cup of tea to do some work on the computer while the girls had rest time (neither napped- typical) then played together in the playroom for another hour. Since my tuna salad didn’t stick for long, I grabbed a snack too.
Sliced banana with Publix’s almond butter (I like the consistency of it) and a sprinkle of Enjoy Life mini chocolate chips.
We all ate dinner together at 5:30 while I relished in the joy of a later sunset.

Yesterday was Hailey’s half birthday. Since I have trouble enough trying to keep up with celebrations for real birthdays, I don’t usually do anything spectacular, but I did sneak in two mini cheesecakes to surprise her.
We all sang and dug in with our forks.
She giggled and sparkled with pride as she relayed to us the story of telling her preschool teacher that she was now officially 5 1/2.

After the girls went down, I sipped a pamplemousse La Croix (which is probably my favorite flavor) while watching This Is Us. I’m a committed fan since binge watching it when I had the flu, though I’m a week behind so no spoilers please! 😉
And that was it- our wild and crazy Wednesday!

That’s so funny, I LOVE The maple RX bars! I can’t seem to find the maple ones anywhere I grocery shop though. I haven’t tried any of the other flavors. I love the idea of celebrating half birthdays. We’re celebrating our little guy’s very first half birthday in just a week and a half by giving him his first solid food..SO excited 🙂

Oh my gosh, too funny! How is that for different strokes for different folks? 😉 I actually ended up throwing that one away because I just couldn’t eat it (which is rare for me). Maybe I got a bad batch??
Congrats on the soon to be entry into solid foods! It was one of my most favorite milestones. It’s so much fun!

We don’t celebrate half birthdays but prob should since my son’s birthday is January in the dead of winter so July would be much more fun to celebrate!

I love Rx bars, my favorite flavors being the chocolate sea salt and blueberry but sometimes they are a little gaggy. Gross word I know but sometimes they just gross me out and other times I love them. Weird, right? That tuna looks great though!

Haha, I know exactly what you mean! The ingredient list is great which is why I stick with them, but the maple was totally “gaggy” to me 😉

I gave up coffee for lent and I’ve been trying to get into tea. So far, I’m not a huge fan, but I’m sticking with it! I’ve yet to try earl grey. When you add collagen does it improve the flavor, or is it strictly for a health boost?
I used to celebrate half birthdays growing up! One time I even got half a cake, and I thought I was the coolest person ever. Happy half to Hailey!

The collagen doesn’t alter the taste at all so it’s strictly for my eyelash growth! Haha, but seriously.

You have mentioned that honey garlic chicken recipe several times and this is the first time I noticed it was made with chicken thighs – this makes me very excited because I have chicken thighs in my freezer for a long time now with no clue what to make with them – problem solved! Do you put both carrots and sweet potato in yours?

I do use both carrots and sweet potatoes! It’s a super simple recipe and though I like to add a little hot sauce or something to give my portion a little more flavor, the girls really like the dish as is!

We don’t celebrate half birthdays, but we definitely should! I like any excuse for a mini-party or dessert. Your day of eats look delicious and definitely have me hungry now! I think I need to amp up my breakfasts too. I might actually want to get out of bed for something like your plate!

We don’t celebrate half birthdays, but I have a hard enough time remembering actual birthdays for everyone. Haha! I’m always trying to mix up everyone’s birthdays. 😉 I love This is Us! At first I wasn’t sure if I was going to really get into it or not, but I’m definitely hooked, which also reminds me I have the season finale to watch still!!!

I am ok with the RX bars I heat them up the only reason I eat them is because of the ingredients my husband couldn’t do it he threw his out ! Love fitjoy bars!

Yes, I love the ingredients! That’s why I don’t eat a lot of bars. I am super picky about the ingredient lists.

I ate Rx bars all the time before i was just diagnosed with an egg allergy (so not fair!). My faves were choc sea salt and the mint chocolate.
I havent tried the publix almond butter yet. Drippy or thick? They have a cashew too.
No new products come to mind except we did try a new to us chocolate tonight. Alter Eco Burnt Caramel 😍 i def enjoyed my half of the bar!

I bought an epic bar the other day (basically think beef jerky/beef stick). But I was not a fan.

I liked the Mighty Bars more than the 1 Epic bar I tried, but I know it’s a lot to spend and not like it. They’re not cheap!

If you liked the Chocolate Sea Salt Flavor, definitely try the chocolate coconut. My favorite!
