We got home yesterday from a wonderful trip to Edisto Beach, SC with my mom, dad, brother, sis-in-law and my sweet niece. It was the metaphorical breath of fresh air I needed and we lucked out with perfect weather. I’m still sorting through pictures, but plan to share some soon (I can hear your excited squeals through the screen, ha).
Despite being a fabulous getaway, both girls were a little run down yesterday. I’m hoping it’s just a mild case of too much vacation and we’ll see how everyone is doing today after a good night’s sleep.
Since Edisto is only 4ish hours from home, it was great to get back yesterday around 1. Though we were all ready to plop down on the couch, David and I rallied to really get things back in order. We tackled the unpacking and laundry, he cut the grass and changed the house air filters, and I grocery shopped.
A plus about longish car rides is having plenty of time to meal plan… and to remember to actually grab your reusable bags.
Our line up for the week looks like this–
Sunday- Salmon, Asparagus and Sliced Tomatoes
Monday- Grilled Mahi Tacos with Pineapple Mango Salsa
Tuesday- Chicken Enchiladas
Wednesday- Mom’s Meat Spaghetti Sauce over Noodles with Salad
Thursday- Slow Cooker Pulled Pork (using this sauce) with Roasted Brussels Sprouts
Friday- PIZZA.
After shopping I had a pretty clingy baby on my hands, so I loaded her up while Hailey watched Little Einsteins and got to work.
The boss lady is always on my back around here.

I made David some freezer breakfast sandwiches with fresh sausage patties.
After all, it’s important to know your spouse’s love language.
I also prepped some layered salad jars with wheat berries and quinoa inspired by Angela’s recipe.
But I ended up cheating and using this delicious pre-made dressing I picked up, which will double for our mahi mahi marinade for fish taco night. Meal planning win.
I won’t lie, when the girls went down at 7, I was glad I also took a short cut with dinner. I simply roasted the asparagus and sliced the tomatoes then let Whole Foods handle the main event.
The Mediterranean Salmon in Parchment with brown rice and olives from the seafood counter was on point. It is now on my short list to recreate because it was incredible!
Now I really feel like summer is beginning, though I know we have three weeks until it’s really here. Still, preschool is out and the temps are hot- bring on the summertime fun!
What helps you feel back on track after vacation?
For me, it’s definitely having food in the house and laundry done!

Definitely having food on hand, unpacking and taking 10 minutes to fill in my calendar. I feel frazzled on Monday morning if I can’t take time Sunday to see what is happening in the coming week. And thanks for the salmon review! I always wonder about the prepped food at WF.

I’ve been really pleased with their ready-to-make meals. Toughest thing is the price ($$$) but occasionally it’s worth it!

We did the same thing! We took a mini vacation for a long weekend at the beach and on our way home we went grocery shopping because I feel out of sorts when we have an empty fridge!

Getting home from vacation with a little time to prep for the week is almost essential to me. It makes me stress less about Monday and allows me to enjoy the last day or two of vacation a little more.

I’m with you… it doesn’t matter how tired I am after vacation, I have to get everything unpacked and laundry done and get back on our regular schedule as quickly as possible. Coming back from vacation is hard enough – I don’t want to make it harder by having the house be a wreck for too long. 😉

Yes! Having the house a wreck makes me go crazy. I really love to clean before I leave town so I can come home to a clean house too. Even though it only stays that way for about 10 minutes with kids 😉

Admittedly I sort of love grocery shopping when we come home from vacation. We usually do a “pantry clean-out” right before we leave, so it’s “fun” to re-stock the staples and buy regular groceries.

I agree – having a kitchen filled with food and a good meal plan in place definitely makes me feel back at home and settled after vacation. I also have to have all suitcases unpacked and the house semi-organized so things feel like they’re in order.

I am need of a mini vacay! And while I won’t be getting one anytime soon, I am determined to go to the beach as much as possible this summer – even if it’s just once every few weeks.
And the thing that helps me after a few days away is to start off the very next day with some intentional exercise…and a hearty breakfast!

I ALWAYS have to unpack first thing- like the night we come home! Also, catching up on the laundry and running the vacuum- so basically I am an OCD clean freak….

I am impressed that you guys got all of that done when you came back from vacation. When I get home I just want to sit down and order delivery. However, the next day I usually get back in the swing of things by doing the laundry.
