One of my favorite short cuts with meal planning is repeating meals weekly. The key with this trick is to make sure it’s a meal your whole family really likes. For us, that means sweet potato chili, anything on the grill and, our household FAVORITE, layered fiesta bowls.
I feel pretty silly calling this a recipe because it’s more of an assembly, but without a doubt, it’s David’s favorite dinner every week. As for me, it comes together quickly and is customizable so even Hailey can join in on the action.
I start by sautéing onions, peppers and mushrooms in bit of olive oil with garlic, cumin, salt, pepper and a bit of cayenne. Once soft, I mix in some brown rice (already cooked) and/or black beans.
While that cooks, I chop the other toppings and grill the chicken (that I’ve usually let marinade in an oil, apple cider vinegar, garlic, cumin and chili powder mixture). From there, all you do is assemble!
Start with the vegetable and rice base.
Add sliced grilled chicken (or protein of choice) and avocado.
Then add your favorite toppings. For me, it’s real sour cream, finely chopped red onions, cilantro and, if I have some, chopped tomatoes.
Finally I place the finishing touches of Jack’s Fresh Salsa and jalapenos on top and admire my work briefly before stuffing my face.
David eats his with a bowl full of chips, like a fancy million layer dip, but me? I just need a fork. And perhaps a chip or two for good measure.
What’s a meal you eat every week and never tire of?
Jamie @ fitfortherun says
My favorite go to meal is a panini/plain old turkey sandwich! I literally never get sick of the same turkey sandwiches my mom used to make me when I was a kid 🙂
Alison @ Daily Moves and Grooves says
This looks awesome! I’ll definitely try this soon.
The meal that I eat every week is usually avocado toast with a side of grilled salmon or chicken (seasoned with teriyaki sauce or JackStack all purpose) on spinach. So simple, yet so tasty!
I make something similar all the time. It’s basically the same thing but I add refried beans as the protein usually.
Kimberly @ Healthy Strides says
We do tacos or burrito bowls a lot. I throw protein in the slow cooker with salsa and everything comes together quickly. I like mine with guacamole and fresh pico de gallo.
Cori @ olivetorun says
Looks DELICIOUS! Mexican inspired dishes of ANY kind are right up my husband and my alley. We have it at least twice a week!
Parita @ myinnershakti says
Love meals that come together like this one! Our go to meal is 3-4 different kinds of roasted vegetables, grilled tofu, quinoa, and whatever sauce I decided to make that particular week (usually a fun combo of different condiments). So easy but so good!

Hey, those are the only recipes I use! Love this.
That looks and sounds soooo good! I will have to try this. Lately I have been so brain dead with my meal planning, but somehow I am managing to feed my family. 🙂 I enjoy your meal planning posts.

Looks so good! I will have to try it!
P.s Where did you get those white dishes from?? love em!
Brittany Dixon says
Thanks! 🙂 They were our wedding “china” since we didn’t do fancy dishes. They’re from Williams Sonoma <3
I think our favorite go-to meal is either quesadillas or chicken sandwiches. We eat one or both every week and they never get old.
We make a similar meal! I call it a Mexi-bowls haha.
So funny- I do almost the exact same thing except no chicken and more black beans so I don’t have to defrost anything 😉 We call them vegetarian burrito bowls a la Chipotle. Also a huge favorite at our house!
Us too Katie..We call them Better Than Chipotle Burrito Bowls haha
Tina @ Best Body Fitness says
We do these ALL the time and they never get old. I’m craving a hefty fiesta bowl now.
Ashley @ My Food N Fitness Diaries says
Looks delicious! Homemade pizza is a weekly favorite in our house!
Neil Butterfield says
Sounds delicious, my wife enjoys these kinds of meals. Thanks for sharing Brittany.
We’ve been having burrito bowls a lot too! I used Quinoa and Brown Rice Blend this week and it made an excellent base! I dont use meat and my husband never even misses it. Yes! Your bowls look delicious
Brittany Dixon says
That’s a great point! We’ll make them vegetarian sometime and they’re great! Though David prefers them with the chicken. Oh, men 😉
Hannah @ CleanEatingVeggieGirl says
You take the prettiest pictures ever! Everything always looks so amazingly good :).
Brittany Dixon says
What a nice compliment! I feel like I still have SO much to learn with picture taking, but I do enjoy it. THANKS 🙂
That looks delicious! Ours is a Japanese-style tofu curry. Easy to make and great as leftovers.

I hardly ever eat the same meal two weeks in a row. Maybe once every other week, but I’d get bored too quickly! I do love turkey burgers, enchiladas, soft tacos, and stir fry’s! As long as I can mix up the ingredients a bit. 😉 This looks delicious though!
Lisa @ Exercise eat repeat says
Your food looks so good mmmm
Awesome! I love the idea of sharing your family’s favorite meal. My husband gets bored eating the same thing too often, so I mix it up quite a bit, but we definitely have our “keeper” recipes that we come back to time and again.
Audrey @ In Shape Cupcake says
I need to try the sweet potato chili and this layered fiesta bowl! Looks fantastic!
Kristen @ notsodomesticated says
Love this! Can you share how much of each ingredient you do for the marinade? Even if it’s just a ball park estimate. Thanks! 🙂
Brittany Dixon says
Oh gosh… it’s probably different every time! I put the chicken in the bag after I pound it, then I put in a glug (a few Tbsp maybe??) of oil, a glug of ACV, sprinkle in some chili powder (1 Tbsp??), cumin (1-2 tsp??), and 2 garlic cloves, minced. Plus some salt and pepper and dash of cayenne.
Sorry for all the ? but I truly have no idea because I never measure, haha!
Danica @ It's Progression says
I dubbed them “Mexi-bowls” (much less of a fun name than yours!) in our house, but we eat nearly this same thing each week too! Salsa and avocado are my absolute favorite toppings for it : )
This looks delicious and so easy! I’m always up for Mexican and seriously never get sick of it. But I must confess, I don’t like mushrooms either, along with avocado. I do; however, think we can overlook our differences and still be friends. Please?
Matt @ The Athlete's Plate says
This looks delicious!
This looks really good and healthy too. We love stir-frys with lots of veggies and whatever meat I made on Sunday over rice or pasta, or spaghetti.

That’s something I could totally eat every week too. We normally do chipotle burrito bowls (and used to do them weekly). I definitely think we’ll reintroduce those again soon because it’s so easy, music to my tastebuds and filling. Now I’m hungry! haha
Kate @ Indulgent Wellness says
My husband loves taco salad and anytime I am at a loss for what to plan for a certain night, that is his recommendation. I’m kind of sick of it after 6 years of dating and 8 years of marriage, but I don’t think he’ll ever get sick of it! Me on the other hand? I could eat breakfast for dinner (eggs, waffles/pancakes) every week!
Elle @ The Clean Project says
I could eat homemade pizza several times a week. I always make a double batch of pizza dough and freeze half of it. Pancakes or waffles and bacon are a go-to as well.
She Rocks Fitness says
I always make salmon 1-2 times a week paired with a vegetable and some sort of carb. Lately I am pairing every dinner with Portuguese bread and avocado…I cannot get enough of that combo. It’s so GOOD!
