One of my favorite short cuts with meal planning is repeating meals weekly. The key with this trick is to make sure it’s a meal your whole family really likes. For us, that means sweet potato chili, anything on the grill and, our household FAVORITE, layered fiesta bowls.
I feel pretty silly calling this a recipe because it’s more of an assembly, but without a doubt, it’s David’s favorite dinner every week. As for me, it comes together quickly and is customizable so even Hailey can join in on the action.
I start by sautéing onions, peppers and mushrooms in bit of olive oil with garlic, cumin, salt, pepper and a bit of cayenne. Once soft, I mix in some brown rice (already cooked) and/or black beans.
While that cooks, I chop the other toppings and grill the chicken (that I’ve usually let marinade in an oil, apple cider vinegar, garlic, cumin and chili powder mixture). From there, all you do is assemble!
Start with the vegetable and rice base.
Add sliced grilled chicken (or protein of choice) and avocado.
Then add your favorite toppings. For me, it’s real sour cream, finely chopped red onions, cilantro and, if I have some, chopped tomatoes.
Finally I place the finishing touches of Jack’s Fresh Salsa and jalapenos on top and admire my work briefly before stuffing my face.
David eats his with a bowl full of chips, like a fancy million layer dip, but me? I just need a fork. And perhaps a chip or two for good measure.

My favorite go to meal is a panini/plain old turkey sandwich! I literally never get sick of the same turkey sandwiches my mom used to make me when I was a kid 🙂

The meal that I eat every week is usually avocado toast with a side of grilled salmon or chicken (seasoned with teriyaki sauce or JackStack all purpose) on spinach. So simple, yet so tasty!

I make something similar all the time. It’s basically the same thing but I add refried beans as the protein usually.

We do tacos or burrito bowls a lot. I throw protein in the slow cooker with salsa and everything comes together quickly. I like mine with guacamole and fresh pico de gallo.

Love meals that come together like this one! Our go to meal is 3-4 different kinds of roasted vegetables, grilled tofu, quinoa, and whatever sauce I decided to make that particular week (usually a fun combo of different condiments). So easy but so good!

We’ve been having burrito bowls a lot too! I used Quinoa and Brown Rice Blend this week and it made an excellent base! I dont use meat and my husband never even misses it. Yes! Your bowls look delicious

I hardly ever eat the same meal two weeks in a row. Maybe once every other week, but I’d get bored too quickly! I do love turkey burgers, enchiladas, soft tacos, and stir fry’s! As long as I can mix up the ingredients a bit. 😉 This looks delicious though!

Oh gosh… it’s probably different every time! I put the chicken in the bag after I pound it, then I put in a glug (a few Tbsp maybe??) of oil, a glug of ACV, sprinkle in some chili powder (1 Tbsp??), cumin (1-2 tsp??), and 2 garlic cloves, minced. Plus some salt and pepper and dash of cayenne.
Sorry for all the ? but I truly have no idea because I never measure, haha!

I always make salmon 1-2 times a week paired with a vegetable and some sort of carb. Lately I am pairing every dinner with Portuguese bread and avocado…I cannot get enough of that combo. It’s so GOOD!
