I don’t know about you, but I feel like the new year (last time I mention it I promisssssse) is really just starting today. I’ve been spoiled by having David around so much the last couple of weeks and today brings back a real work week. I’m so grateful that he had some time to hang around here and we made sure to spend our time together wisely. You know, by driving an hour to go to a RV show and all.
Long live the Ergo!
So today brings back reality, but at least that pesky tooth that Kaitlyn has been fighting with finally popped through yesterday. In her defense, it did look incredibly painful, but luckily a little gnawing on a carrot finally helped it make its way through. And not surprisingly, she slept like a dream last night.
But the real focus of what I’m sharing today is my return to meal planning! I really missed it and am thrilled to have this week’s meals laid out and grocery shopping complete.
So what’s on the menu? A few new ones to try…
Stuffed pepper soup (tried it last night and it was very good, though David and I preferred to add some spice after Hailey ate her share)
Brown Sugar and Bourbon Glazed Salmon
Mmm.
I hit up Whole Foods early Sunday morning and discovered that is the perfect time to shop.
With a nearly empty store I was able to move my way through at an impressive speed, maintaining enough extra time to hit up the breakfast hot bar. How they make sautéed vegetables delicious enough to eat for breakfast is beyond me, but YUM.
Total grocery cost: $162.43 including the hot bar food. I feel pretty good about that total, considering a large majority of items purchased were organic. I stand by my claim that I can shop for cheaper at Whole Foods than Harris Teeter, but that’s a post for another day.
David and I are on a mission to reach peak physical condition (orrrrr maybe just to feel more fit) in 2015 and a stocked fridge definitely helps.
And with that, let the week begin!
What’s on your menu this week?
Do you have any food/healthy eating related goals for 2015?
Joanna @Makingmine says
Soup is the BEST way to get my 18 month old daughter to eat healthy (me too for that matter, haha)! I really want to try that stuffed pepper soup – yum!
John J. says
Your goals, menus, and fridge all look inviting and balanced (including the tasty brews in the upper right)!

I always go to the grocery store first thing Saturday or Sunday morning, it’s so quiet!! This week we are making turkey burgers, herbed salmon and lemon chicken!
Karen says
Awesome mission for 2015!
Farah says
The soup you made looks incredible! I made beef and bean chili last night, and I cannot wait to eat the leftovers for lunch today. I may make some homemade granola bars for quick snacks as well. Have a great week!
Jen says
I have the same goal for this year. I am determined to get in the best shape ever, I have really worked out inconsistently over the last year and a half since my twins were born so it’s time to really step it up!
Marjorie @APinchOfHealthy says
Today is Monday, and I am flying without a meal plan….eeeek! I feel behind in the new year already.
Lindsey @ Simply Lindsey says
Those meals look delicious! This week was the first week I didn’t do major meal planning because I’ll be out of town on a work trip. I have a feeling my husband will survive on take out and pasta. 😉
Amy says
Great looking meal plan! I’ve never tried a roast chicken in a crockpot, I might have to try that soon.
Marnie @ SuperSmartMama says
That Mediterranean baked chicken looks good!
I also am starting 2015 off with some better meal planning. With a newborn in the house, I have to pick recipes that are easy and not too time consuming!
Michelle G. says
Our grocery store is open 24 hours, so this week I tried going at 8:30 PM on Saturday night after kids were asleep. It was awesome.
Rachel W says
Oh! That first soup you shared looks so good! I am adding that to my list!
We’re headed to the grocery store this morning to do the same thing. Got a big list for some yummy new meals we’re trying this week!

That’s a beautiful fridge!

Seriously, can I just hang out with you on meal prep and grocery day so you can get me in the habit of doing it? You make it look so easy! I think I’m still not all that together after moving. It’s almost settling it that this is our new “normal” but I have a tiny bit more work. Meal planning and making sure no more future grocery bills are crazy expensive like they have been this past week are my priorities.
Jessica @Myhealthypassion.com says
Woooo Same goal over here!!! I am SO ready after much fun this holiday season! I love Whole Foods early mornings!
Stacy says
I’m so glad you are back to sharing your meal plans (my favorite part of your blog)! I am a big meal planner and it is always good to get inspiration and make comparisons (grocery totals/items/etc). A few of our meals for the week are pork carnitas burrito bowls, cassoulet & green beans, ham/swiss/fig butter paninis & fruit cups, beef & mushroom stew w/carrots and parsnips. This week is a little meat heavy for us and we are trying to get back in to eating fresher whole and unprocessed foods to bounce back from the holiday extravagance!
Laura @FitMamaLove says
I’m looking forward to reading about you getting in peak physical condition!
Being at the grocery store that early all by myself sounds wonderful! Especially with time to enjoy the hot bar!
Jerrica says
I really, really do not enjoy salmon but I power through it once a week anyway because my hubby loves it. I was supposed to make your brown sugar bourbon salmon last night but I was out of brown sugar and bourbon!! That is on the menu tonight after a grocery pit stop. We also have jalapeno popper stuffed chicken, pizza, homemade potstickers and homemade ricotta gnocchi with pesto!
Parita @ myinnershakti says
I need to get back on the meal planning wagon too. Vishnu and I want to eat more greens this year, so we’ve decided to take on a salad challenge – eat at least one salad every day. I hope it sticks!
Lani says
I would do love to go shopping with you! You make planning and shopping look effortless. We are similarly returning to a schedule and were out of everything so I had to shop a lot this weekend and spent more than usual. Here’s hoping I make it stretch.
Holly Marie says
LONG LIVE THE ERGO! YES! Makes life with two THAT much easier! I know we definitely want to find some family-approved recipes that are also allergy-friendly because frankly our weekly menu is getting a tad boring… I don’t know if I can have another chicken burrito bowl-and I never thought I would EVER say that. I definitely look at all of the recipes you post and try to substitute the items we have allergies for and see if they are a hit-thanks for sharing!
Courtney @ Sweet Tooth, Sweet Life says
Come help me organize my fridge. Please! 😉
Lauren says
I’ve always wanted to try your salmon-looks so good! I don’t have bourbon, but we have some Jack, so I’m hoping that will work OK! Tonight I’m making bacon wrapped smoked chicken sausage with roasted butternut squash and salad. Tomorrow veggie and bean soup, Wednesday will be buffalo chicken tacos along side sauteed green beans and zucchini. Rest of the week will be leftovers, veggie frittata with roasted sweet potato wedges and probably dinner at my parent’s 😉
Tiff @ Love, Sweat, & Beers says
Mmmm, that soup! I’m saving soup for Thursday night here. Did you realize it’s a high of 30-friggin-degrees here in Charlotte on Thursday??? Yikes. Of course, I’m having chili tonight though, so I’m just all about the cold weather comforts. 🙂
Hannah @ CleanEatingVeggieGirl says
I totally agree that Whole Foods’ prices are often cheaper than my local grocery store. When I shop the health foods section at my local chain, the products are almost ALWAYS more expensive than at Whole Foods. I think that is a common misconception, which is unfortunate!
Matt says
Impressive grocery hall!
Glenda says
Thank you for this! All of these look amazing 🙂
Dana says
These look so YUM! Thanks for sharing 🙂
Kelly Villers says
Oh my Gosh!! THANK YOU!! I make that claim about Whole Foods all the time and no one believes me!! 🙂
