Are you salivating yet? I sure was when I read the recipe inside my cookbook…
I decided to check out the Bridge & Groom cookbook in hopes of finding easy, yet inspiring recipes to make for the sides to my Christmas meal.
This one excited me, so I gathered my ingredients… a it was such a wonderfully simple list!
1 c wild rice
1/3 c (heaping) craisin
2 Tbsp green onion
1 Tbsp olive oil (supposed to use a high quality kind)
S & P
&… 1/3 c toasted pecans!
Hubbs actually picked this bag up at a roadside stand and I was excited to get to use them in a recipe. So I got crackin’
1/3 c of pecans later, it was time to toast them. I heated the oven up to 350 degrees, spread them on a baking sheet, and toasted them for about 10 minutes, until they browned and they smelled good 🙂
Then I chopped them up.
Then, I cooked my wild rice blend according to the directions on the package. Looking back, I’d like to try it with all wild rice instead of a blend, but blend is all I had…. so blend is what I used.
After cooking, I drained the rice and poured into a bowl.
I stirred it up well and added some salt and pepper to taste.
It. Was. Gorgeous.
The colors were perfect for a Christmas side dish!
But what about the taste?
I loved this recipe!
An easy recipe with a fancy taste is right up my alley!
However, the amount the recipe made only fed Hubbs & me, so I’m going to need to triple quadruple fivetuple
MAKE A LOT MORE 😉
