There’s something about the smell of bubbling fruit and buttery crust wafting through the kitchen that brings me straight back to childhood summers. Bare feet, lightning bugs blinking, and that glass dish filled with my mom’s blueberry cobbler cooling on the counter.

I remember lifting the plastic wrap shielding the cold, leftover cobbler and sneaking pieces of the sweet and crunchy crust and acting surprised that the amount of leftover cobbler had magically reduced when we pulled it out for dessert later on.
I remember mom using the same cobbler method for peaches when the Georgia heat finally ripened them to juicy perfection. But my preference has always been for this blueberry cobbler with its juicy berries bursting under a crispy, sweet, buttery crust.
Mom came in town on Sunday for a quick visit to meet the chicks and see the house updates. We spent Monday pickling cucumbers and jalapenos from the garden then decided to celebrate our work by making this blueberry cobbler from berries I picked a few days prior. Hailey mentioned that she wanted to learn how to make the cobbler, so both she and Kaitlyn joined us. The sweetness of having three generations making this cobbler together in the kitchen didn’t go unnoticed by me; that’s the good stuff.
Anyway, we worked together to prep the cobbler and after the whole five minute process took place, Hailey looked at us perplexed and said “that’s it?” She was quite shocked to see what a simple process it is to yield such a comforting, delicious dessert.

Nana’s Blueberry Cobbler
Description
This easy blueberry cobbler comes together in minutes with just a few ingredients. Juicy berries bake under a golden, buttery crust for a sweet and comforting dessert- perfect with a scoop of ice cream.
Ingredients
4 c fresh blueberries
1/4 c water
1 c granulated sugar
1 c all purpose flour
1 1/4 tsp baking powder
1/4 tsp salt
1 egg
6 Tbsp unsalted butter
Instructions
Preheat the oven to 400 degrees. Pour the blueberries into the pie dish and drizzle the 1/4 cup of water over them.
In a separate bowl, whisk together the sugar, flour, baking powder and salt. Add an egg and mix until it resembles a coarse meal. Spread evenly over the blueberries.
Melt the butter and drizzle evenly over the cobbler.
To prevent dripping on your oven, place pie dish on a tinfoil lined baking sheet for easy clean up. Put the cobbler into the oven and bake for 10 minutes.
After 10 minutes, reduce the oven temperature to 350 degrees and continue to bake for another 35 minutes. Let cool and serve with a scoop of vanilla icecream.

Oh I definitely have to try this!!! I love blueberry crumbles. I have a blueberry lemon bar recipe I like a lot but it is way more complicated than this one and involves zesting lemons and multiple other steps. This one seems perfect for a quick and yummy dessert!
