Guess who is napping in the crib for the first time?!

IMG_2039

Yes, those are bumpers. Yes, I still have them in the crib.  I’m OK with it for right now.  The crib is part of this new schedule thing I’m trying.  At readers’ requests, I’ll be posting about it soon- a day in the life style, but today, it’s all about the FOOD.

Breakfast

Wheat Toast with PB, chia and honey

Wheat toast, peanut butter, chia seeds and honey.  It’s my new quick breakfast- fills me up and is easy to eat while holding a clingy baby.  Of course, no fall breakfast is complete without…

International Delight Pumpkin Pie Spice

a cup of decaf with Pumpkin Pie Spice.  Usually I buy Breve Cream, which is just cream and sugar instead of this stuff that has unrecognizable ingredients… but the pumpkin pie spice suckered me in… sigh…

Lunch

tuna and spinach sandwich with apple

No morning snack? Nope.  Somehow the morning flew by.  Oh that’s right. It flew by because SOMEone didn’t feel like sleeping… not a wink… I let her fuss a little while I finally made lunch.

Garlic and herb tuna and spinach on wheat, with sliced HONEYCRISP (drooooooooool) apple on the side.

Afternoon Snack

hummus and wheat thins

I was going to sneak in some more nutrients with carrot sticks, but after only 2 days, the carrots had turned slimy. EW!

Be honest… who is in the mood to go watch Ghost Busters now? ::timidly lifts hand and blushes::

Dinner

Guess who stopped by to meet Hailey? Uncle Chris!

IMG_2035

Hubbs’ bro was in town for work and made it over to meet his little niece.  I was so happy he was able to stop by! I was a bit tired (OK, a lot tired), so I snuggled with Hailey while the guys took over dinner duty.

So… it wasn’t surprising when dinner ended up looking like this:

steak and sweet potato fries

Is that a man meal or what? I didn’t even bother asking where the green stuff was :)   It was delicious, though.  Who doesn’t love sweet potato fries?

The guys didn’t stop there… dessert was in order, too.

angel food cake, caramel swirl ice cream and peanut butter chips

Angel food cake with caramel swirl ice cream and peanut butter chips.  This dish could be served in a restaurant. It was a-mah-zing. (Anyone watch Happy Ending? Penny? Anyone? ::crickets::)

When your boyfriend, husband, dad, guy friend is in charge of dinner… does it come out looking like a man meal, like mine did?

What I Ate…on my Due Date

by Brittany on September 7, 2011 · 24 comments

Well, it wasn’t the muffins.

Any other ideas?

I’m quickly finding it difficult to focus on anything other than going into labor.  I know- it’s only one day past my due date, but it’s amazing how minutes seem like hours.

Even my instincts are acting all funny. Proof? I’m not that interested in food.  Sometimes I get hungry, but nothing sounds good and I lose interest. That is so not me! But let me show you…

Breakfast

I had to try the pumpkin nut muffins, obviously, before I brought them to the nursing staff, so I ate two for breakfast, with a thin schmear (I love that word ;) ) of Smart Balance Light Butter.

Lunch

Around noon-ish I guess I was somewhat hungry, and decided I should at something.  So I threw together a Greek salad on iceburg, spinach, tomato, feta, kalamata slices, cucumber, onions and Newman.

Then I hit the road. I had to stay busy.  Library, movie store, grocery store and Healthy Home Market to pick up some more Raspberry Leaf Tea.  They had fresh BBQ in there that smelled sooooo good, I couldn’t resist some pulled chicken.

Snack

The afternoon rolled by at a nice pace, and I decided I really needed to eat something else.  I mindlessly snacked on some hummus.

and in hopes of giving spicy foods one more shot, some popcorn with Texas Pete.  I popped in stove-top with a tbsp of oil.

A little behind the scenes action for you… yes, I take pictures of food on the ground.  it can be risky with this cute little fur ball around.

Dinner

I made my new, easy go-to meal. Shrimp and Chickpea Vindaloo over brown rice. Sprinkled with parsley.

Parsley doesn’t only look pretty, it’s great for blood vessel strength, full of anti-oxidants and has twice as much iron as spinach.  Just a fun food fact for ya!

Freezer Meal: Shells ‘n Cheese

August 23, 2011

Originally I thought I’d stuff my freezer full of meals for when Baby D arrived, but I’m slowly starting to see that I might not have as many prepared as I originally thought. But between family, friends and sending Hubbs out to get food, I don’t think we’ll go hungry However, I did have some [...]

The two week (and 1 day) countdown is on until my due date.  Some days I’m feeling very anxious and I’m just ready already.  However, I’m trying to heed people’s advice by enjoying the quiet and spending time with Hubbs, just the two of us.  So Friday night we decided a date night was in [...]

What {we} Ate Wednesday: BH Edition

July 27, 2011

BH stands for Braxton Hicks contractions.  I felt them all day yesterday, which was something new to me.  It’s when your baby bump tightens up and is really hard for a minute before relaxing again.  They don’t hurt, but yesterday I seriously felt them the entire day, which was something new to me.  I actually [...]

What I Ate Wednesday

April 20, 2011

Yesterday’s doctor appointment went well- but way too fast.  We were in and out in about 10 minutes. But, oh well.  We heard Baby D’s heart beating strong at 148, and I learned I’m measuring a week ahead of schedule.  Maybe that means we’ll have a late August baby instead of early September?! A girl [...]
