Is it ever really the Christmas season until you’ve eaten a piece of peppermint bark? I think not! That’s why I want to share with you this simple peppermint bark recipe today!
It’s the perfect snack for a cozy afternoon or a bedtime snack OR as a great gift to give to friends.
I participated in the Great Blogger Cookie Swap this year. Since I knew cookies would get beat up with my less-than-stellar packing skills, I went with a treat that could get tossed around and still maintain it’s grandeur. PEPPERMINT BARK.
Simple, right? It really is! I don’t have a double boiler, though I hear great things about this one, so I melted my chocolate over low heat in a pot. It worked beautifully.
Step 1: Melt the semisweet chocolate over low heat, stirring often, until smooth. Pour onto parchment-lined baking sheet and smooth into a thin, even layer. Pick up the pan and tilt it to help achieve evenness. Place baking sheet in fridge for 20 minutes.
Step 2: In a cleaned or separate pot, melt white chocolate, stirring often until smooth. Stir in 1 tsp peppermint extract.
Step 3: Turn off heat on the stove, remove baking sheet from fridge and crush candy canes in a large ziplock bag. This should have given the semisweet chocolate about 15-20 minutes in the fridge, which is enough time for it to set.
Step 4: Pour the white peppermint chocolate over the semisweet.
Smooth out the chocolate into a thin, even layer, using a spatula and picking up and tilting the pan. While chocolate is still soft, sprinkle on candy cane pieces, making sure they are gently pressed into the surface.
Step 5: Put baking sheet in fridge for 30-45 minutes until bark is hardened. Take out and break into pieces by gently lifting the sides.

I don’t have a double boiler either, so I just put a small saucepan inside a slightly larger one that has a couple inches of water. Heat the water so it simmers (not boiling) and voila! Double boiler! ’cause I know I’d be burning chocolate if I put it right on the burner!

That’s a great idea! I’ve heard of using a stainless steel bowl inside a pot, but didn’t have a stainless steel bowl to use. I’ll try your way next time- thanks 🙂

It was our first visit, so I can’t really say. I’ve been to 2 zootastic shows where they came to us, but didn’t get to see much of the zoo last night. I’d be very disappointed to hear if they don’t treat the animals well- I’ll have to look more into it. Thanks!

That peppermint bark looks great! The best thing I had to eat yesterday was a hamburger from Red Robin’s Burger Works. We were out shopping and I was famished because I didn’t pack snacks and we ended up eating burgers!

Did you maybe switch the amount of white chocolate and semi-sweet in your ingredient list? That looks like a whole lot more of white chocolate, both in the boxes on the counter and in the layered finished product.

And I’d say the best thing I’ve eaten lately was the Quinoa Mac & Cheese I made for dinner last night. I swear my only serious pregnancy craving is cheese in all forms. This was delicious and cheesy and I felt a lot less awful than when I eat Kraft mac & cheese!

Haha, no problem! The 3 pounds made one baking sheet full. It was the right amount to divide into 3 containers to mail out. I made another batch to give to 2 friends and kept the other third for myself 😉
