Now that’s I’m focused and recommitted to feeling like the strongest, healthiest me, I am excited to really start exploring and experimenting with food again. I finally made it back to my favorite local health food store and had so much fun just browsing the aisles.
We all get our kicks in different ways, right? 😉
I picked up a few new things to try out, including…
This little sample packet from Amazing Grass includes all sorts of natural goodness, like wheat grass, and has a chocolate flavor, thanks to cocoa. I ate my Juice Plus and then decided to see how the packet tasted as a part of…
Breakfast
It turns out it was a fabulous addition! I hadn’t enjoyed a green monster in forever, and I really, really enjoyed it. The slight chocolaty flavor added a delicious twist to my smoothie, and there was no hint of a wheat grass flavor 🙂 In the mix:
- 1-1.5 c vanilla almond milk
- 1 heaping Tbsp of peanut butter
- handful of spinach
- 1/2 frozen banana
- drizzle of honey
- a pinch of xantham gum (for thickening)
- Amazing Grass Packet
Lunch
Again, I had whipped up a large batch of quinoa to eat throughout the week and I really am loving having it in the fridge. It’s quick, easy and delicious. My heart hurts for those that find quinoa bitter… I love it so much! …but I guess you could do the same thing with brown rice, barley, wheatberries or any other grain.
I made a hefty bed of spinach, topped with a load of quinoa, goat cheese and dried blueberries (another find from Healthy Home Market!) and drizzled with Newman’s Own Light Balsamic. Yes, it’s basically the only dressing I eat. I can’t help it. It’s delicious.
Snack
It was a busy afternoon, so when my stomach started rumbling, I reached for quick and easy. An incredible honeycrisp apple (they truly are the best!) and a Clif Bar
Dinner
I love when the slow cooker makes dinner for me! We enjoyed burrito bowls for the first time in a while and it felt good to eat some healthy Mexican food, rather the the greasy (yet, also delicious) food from our favorite restaurant.
Mine had a mix of brown rice, black beans, shreddd chicken, peppers, onions, avocado, cilantro and sour cream. And on the side, you can’t forget some chips ‘n salsa.
Snack?
I told you, I can’t get enough pumpkin beer, so Hubbs and I split a glass of his pumpkin home brew while we watched The Sing Off.
On that note (pun intended!), I’m slightly irked that Delilah is still around. In my opinion, they should have been gone 2 shows ago. But on a positive note, I really like Sarah Bareilles as the new judge. She is so quirky and cute!

I shared with you guys how frustrated I was by my awkward appearance on A Healthier Charlotte. Well, the video is live now, and though watching myself on camera was slightly painful, we were all three invited back to do another segment, so maybe I wasn’t as bad as I thought? You guys really did do well on the show! Well-spoken, good information, we were really happy with it in post-production. (Oh, and when we all met with producers afterwards, they immediately said “those three – have them back on to do another show in a few weeks!”). So, you got it made in the shade, Brittany!

Oh, and P.S. I am currently in the midst of a Felicity marathon on Netflix. Such a good show, and it was on from 1998-2002 when I was at UGA, so it brings back some fun college memories. (Although UGA was quite different!)

You were great. You are definitely way too hard on yourself. Lighten up. You had a lot of good information and your personal style was credible and inviting. When will the next show be on? You might want to add for the next show about some of the psychological benefits of eating well and feeling good about yourself for the good choices you make and the resulting successes inherent. You did great! We are always our worst critic. Your smoothie sounds great–unfortunately smoothies rarely fill me up at a meal. I am especially ravenous at breakfast since I mam nursing, so oatmeal usually does the trick. The burrito bowl, and your quinoa combo, sound delicious!
