We’re having quite the week over here. David is under the weather, Hailey is struggling to get back on a schedule with her naps (though I take full blame for that one) and I can’t seem to get organized for one of my best friend’s weddings this weekend. What am I wearing to the rehearsal dinner? I have no clue. I know, WAhhh #FWP. Thank goodness for bridesmaids dresses. (I might be the first person to say that, ever.)
That being said, I’m throwing together meals this week instead of planning them out, which has led to some interesting WIAW combos.
Flaxseed oatmeal with chopped honeycrisp and cocoa coconut butter
I did make it to the gym and knocked out a total body weights workout. It’s possible to tone your arms for a bridesmaid dress in, oh, 3 days, right?
Honeycrisp.
What’s most important is that I’m ready to shower Kristin with all the love and attention a bride deserves on her big day, so I’m making sure I stay healthy. ACV is my new bff.
Apple cider vinegar, honey, hot water. x3
Lunch this week consists of whatever is around. Like leftovers.
Three cheese quinoa, collards and pinto beans.
Greens, bleu cheese and… pinto beans.
Bring low on my bean supply, I used pintos and discovered they’re a very underrated bean. They were quite good, actually; not just for Mexican cuisine.
Stove-popped popcorn and Texas Pete.
No, I’m not pregnant.
Vegetable soup, grass-fed ground beef taco quesadillas with salsa, sour cream and guac for dipping.
I’ve been using up all the random veggies in the fridge by making pot upon pot of vegetable soup. It’s finally soup weather and the ability to throw it all on the stove and call it a meal makes me happy.
What makes me sad? David has never heard of Hey Dude.

Salute Your Shorts!! You can actually buy episodes on Amazon and I did a few months ago and totally regret it. I always remembered the show as being amazing and ridiculously funny and as an adult …. not so much!

I probably make the soup differently every time, but generally I chop up veggies (yesterday was onion, sweet potato, zucchini, corn and peas). I heat olive oil (1-2 Tbsp) over medium heat and saute the onion and sweet potato for 5-8 minutes. Then I add all the veggies, a can of diced tomatoes, 32 oz veggie broth and 1/4-1/2 cup of barley. I throw in cumin (maybe 1-2 tsp?), garlic powder (1ish tsp) and a bit of cayenne. Bring to a boil, reduce to a simmer for about 40-60 minutes.
Some batches are better than others, but I can always add some Texas Pete if I need more flavor 🙂

I’ve never heard of either of those shows! Maybe they were more American shows? Ha ha, who knows.
I swear sometimes when I do weights, I “feel” results within 2 days of doing them;) I know that is definitely not true, I like to pretend it is though.

Man, I just met you and we already have no chance?! At first it seemed like we could be BFF’s but my lack of knowledge apparently is just to big a Flaw…. Haha. I have never heard of either show, but I am for sure looking them up right now!!
Oh, and that vegetable soup looks delicious. Do you just add all of the ingredients together and boil them? I think a recipe (or at least an instruction manual) is in order.
