I really appreciated the feedback last week when I posted my meal plan on Sunday. While I’m sure I won’t make it on here every week, I’m going to put forth and effort to share these as often as possible because who doesn’t love talking FOOD and getting new recipe ideas, right?!

Meal Prep
Sunday I made another batch of turmeric and ginger tonic to have each morning, as well as 4 salads-in-a-jar for the busy week ahead.
I wasn’t sure how this combo would work with pear at the bottom and all, but it lasted 4 days still tasting delicious! I made my own dressing with walnut oil, champagne pear vinegar, lemon, honey and a pinch of salt. From the bottom I layered: dressing, diced pear, pomegranate arils, chopped spinach, toasted pecans, gorgonzola cheese and more spinach.
Sunday
Whole Foods Mediterranean Salmon Parchment Packets with Roasted Brussels Sprouts
Family’s Feedback: While it’s usually one of mine and David’s favorites, whoever made the pouches accidentally swapped black olives in the place of the usual kalamata olives. It was a bummer for me! The girls split one packet between them and ate it all (minus a few bites of salmon from Kaitlyn) and the Brussels too (one of their favorite veggies).
Monday (Halloween)
Mom’s Spaghetti Sauce over Zoodles (me) and Spaghetti (the fam)
Family’s Feedback: Always a choice I can count on everyone gobbling up quickly, which is why I chose it for the craziness of Halloween. I made the sauce the night before so everything was ready to go.
Tuesday
Family Feedback: David and I always enjoy this meal, but my favorite sausage to use is a cheddar and jalapeno sausage that is quite spicy, so the girls had mac and cheese and raw peppers with ranch for dinner instead. They approved.
Wednesday
Copycat Stella Greek Salads with Chicken
Family’s Feedback: I will have to make this again and write it all down because it was fantastic! David worked late but both the girls and I devoured it.
Thursday
Sauteed Mushroom and Onion Cheeseburgers with Roasted Yukon Oven Wedges
Family’s Feedback: Both girls aren’t usually over excited for burgers so I was thrilled when they both ate it up and Hailey asked for cheeseburgers everyday. Apparently these turned out ok! We also had Farmhouse Culture’s Garlic Dill Pickle Kraut with we all basically just eat with a spoon. So good!
Friday
Papa Murphy’s Pizza
Family’s Feedback: Don’t really care. It’s Friday and I’m DONE by then. But they don’t complain 😉

Hi Nicole, sorry for my slow response! It is Pederson’s Natural Farm Uncured Jalapeno & Cheese Smoked Sausage. I slice up the full 14 oz sausage for David and me. I hope this helps!

I didn’t use a recipe for the burgers. I did use a burger seasoning blend for the burgers, then just melted cheese on them while grilling and added mushrooms and onions I sauteed in a little butter. Hopefully soon I can write down a real burger recipe to share, but I just winged this one!
