Is anyone else feeling a little mixed up this week? Between getting home Monday and having friends up for the weekend starting tomorrow, my meal planning was incredibly thrown off… meaning I just didn’t do it. Instead, I went shopping sans list to pick up some basics. This is what my haul looks like when that happens:
Apparently my basics include Clamato juice? Apparently. Bloody Marys anyone?!
Whenever I have to shop without a list I resort to very basic, clean eats. I can’t figure out ingredients to chia pancakes or vegetable risotto on the fly, so I grab the basics to get me through. Here’s what a day of simple eats ends up looking like…
Does it get much more simple than whole wheat toast, an egg and a banana? I think not. And as for cooking my egg over medium? Nailed it.
Lunch was the simplest of classic salad ingredients. Romaine, grape tomatoes, cucumber, onion, carrot and feta cheese with a homemade dressing consisting of not much more than oil, dijon and vinegar.
Rainy days call for soup and I always really enjoy Pacific’s boxed soups. So easy; so good.
Hailey likes them, too.
My afternoon snack simply consisted of crackers, cucumbers and hummus.
You may consider it a light snack unless you saw that I ate half the tub. Darn you Sabra for always sucking me in!
A stormy afternoon lent itself to simple activities. Like playdough and letters.
And a new Stitch Fix arrival to play dress up with.
After a phone call from David letting me know he’d be working super late and putting Hailey to bed, I scrounged around to find the makings for a simple meal for one.
I found a frozen piece of tilapia, some veggies that needed to be used up yesterday and a new pasta hiding in the pantry.
This was just OK; I prefer the quinoa pasta.
It only took 20 minutes to create a simple, summery dinner for one.
Zucchini, onion and tomato sauteed in a white wine and garlic sauce atop spaghetti style pasta with braised tilapia. All topped off with fresh basil.
I actually surprised myself with how tasty this was. I’ll be making it again.

Tuna and hummus wraps or turkey bacon BLTs with avocado. Great for hot days too since there is little or no cooking involved.

I’m so glad you just said BLTs. I haven’t had one this summer yet! I need to get on that stat. 🙂

I kept the dress and a ‘watercolor’ sheer sleeveless top. Luckily the other 3 were easy to say no to!

I am the same way when having guests over! But, I tend to buy things I would never buy if no one was coming over because I want my guests to feel like they have a lot of choices!
Bloody Mary’s are my favorite, I literally crave them. When I don’t feel like drinking I’ll just make them without the vodka, yum!

Being 9 months pregnant, whenever I go to the store (even with a list) I end up with some unnecessary things. If it sounds good, I get it. Not very much really sounds good so I’m not worrying too much about the grocery budget for the next couple weeks.

I think you have a perfectly legit excuse 😉 I remember in the beginning of pregnancy and the end, I couldn’t have cared less about meal prep!

Oh yes! I’m TERRIBLE in the beginning. Anything that kind of sounds like something I might possibly want to eat, goes in the cart. Haha!

I think it’s hard to beat a basic salad…I’m not by any means a “healthy” eater but I would choose a salad like that almost any day of the week!

Our meals have been all over the place this week too. We’re headed out of town for most of the holiday weekend, so I’m trying to avoid letting any good food go bad/get wasted (I can’t stand when that happens!)…we’re running on the bare minimum at this point!

My go-to looks a lot like yours- pasta tossed with garlic, vegetables and some EVOO. Quesadillas are another one, but only when I have a stack of tortillas on hand.

I firmly believe that often times the simplest recipes made with the most whole ingredients are actually the best! The other day I prepared cauliflower “rice” with roasted sweet potatoes, sauteed kale, coleslaw mix, onions, and Bragg’s Liquid Aminos. It was super simple but seriously delicious.

That picture with the egg is perfect. 🙂 My daughters both love soup too. Their favorites are usually beef, vegetable, and rice or anything with noodles.
My favorite healthy meal is probably a salad with homemade dressing. I always feel good after eating a lot of vegetables!

I planned meals for this week, but we were out fo town last weekend too and I haven’t had a chance to do a “real” grocery shopping trip! I stopped on the way home from work yesterday to grab a few essentials, but our fridge is still pretty bare. I’ll probably re-plan my weekend meals and hopefully go to the grocery store tonight.

Clamato makes it a Blood Ceasar. (Plain tomato juice is used in a Bloody Mary.) I love those! Way better than a Bloody Mary. Very popular in Canada I’ve found, not so much in the US.

I wasn’t sure I’d like the dress on, but I ended up really liking it! Especially because it was the right length for me to wear with flats which NEVER happens since I’m 5’1″. You should definitely try out stitch fix! I will warn you though, it’s addicting 🙂

I love cooking some tempeh or tofu and mushrooms then grating carrot, zucchini and serving it with the hot food along with sprouts and sweet chilli. It sounds weird but it is so tasty!

At the moment…pretty much any fruit with spices and yoghurt are my go to dishes. Well, snacks! Although when hubby has been out playing action cricket, I’ve been known to have a huge bowl of fruit for supper! I love fruit – raw, heated in the microwave, baked, fried in the pan…with a bit of spice like cinnamon, and dollops of yoghurt and a drizzle of honey. Good to go! Your food for the day looked delicious! So healthy and easy.
