As fall creeps in, or actually, as it arrives with a bold, frosty entrance, I’m hurrying to fit in as much fall fun as possible. Naturally, this includes pumpkins and roasting their delicious seeds.
I tried to get Hailey in on the action, but she wasn’t so sure about the pumpkin guts,
I was on my own and found separating the slime from the seeds oddly therapeutic.
Usually I go the simple salt and pepper route, but decided to try a sweet twist.
Note: do not rinse the seeds! It adds more flavor to the final product.
Pumpkin Pie Spiced Pumpkin Seeds
-1 1/2 cups unwashed pumpkin seeds
– 2 tbsp butter melted
– 1 1/2 Tbsp sugar
– 1/2 tsp salt
– 1 tsp cinnamon
– 1 tsp pumpkin pie spice
Preheat the oven to 350 degrees and toss the seeds with melted butter.
Add the spices and toss well.
Spread into a thin layer on a greased pan.
Roast for 30 minutes, stirring often.
