Know what else is fun to say?
Pescatarian.
A pescatarian is someone that is a vegetarian, but also eats fish and other seafood. At least, that’s my understanding of it. It’s also what David and I will be for the next 38 days.
Why? Well I finally got around to watching Forks Over Knives and found it incredibly inspiring. Though I’m not ready to go vegan, I am ready to make our diets more plant-focused. David said he’d be on board for a challenge, so we decided to give up meat until Easter.
No red meat, turkey, chicken, pork, etc.
I’m excited because I feel it will challenge me to get more creative in the kitchen and provide more wholesome dinners. So what will I be eating? In addition to bean and grain based dishes, I’ll be noshing on…
Bagels with scrambled eggs, spinach, peppers and onions, topped with fresh salsa.
Tuna salad on greens with mandarin oranges and pecans.
Spinach and avocado salad, salmon, baked sweet potato and roasted mixed vegetables.
Oh yes, and martinis are meat-free, too.
Thank goodness because it’s the WEEKEND! Wahoo!

Hubby is a “flexitarian,” which I joke is something he made up to eat what he wants, but apparently is a real thing. 🙂 Basically he’s a pescatarian + poultry-eater. By default, I often eat the same way – lots of soy crumbles in lieu of beef, turkey and chicken sausages, etc. I don’t think I could give up the poultry though – I don’t like fish enough, although I love seafood!

I’m not giving up anything for Lent…but I’m working out the kinks in my “vegan with benefits” lifestyle…meaning I’ll probably end up being something closer to pescatarian. 🙂

I’ve been doing vegetarian February, and I attribute the fact that the hubs actually joined me in this to the fact that he watched that movie not long ago. Interesting flick!

I watched that movie twice in two days- once alone And then once with the hubby. It made a huge impact on both of us. I am basically a pescatarian right now, as my pregnancy aversions don’t allow me to cook meat! So most days I am a vegetarian, with the couple of wonderful times per week I get to enjoy seafood! It’s been interesting trying out vegan recipes- the vegan lasagna they showed at the firehouse is really yummy. You should add that to your cooking list!

I recently read a blog series on Serious Eats where a hard-core New York chef and foodie guy went Vegan for about a month. He wrote something that really stuck with me.
Cooking with meat is not especially creative or challenging.
“What’s for dinner? Meat.” That’s too easy! I like the idea of vegan cooking as a way to be creative and expand my culinary skills. After all, I think it’s MUCH harder to learn how to prepare all the different kinds of vegetables than how to cook just a few kinds of meat.

I could definitely eat this way. I would love to eat seafood every night of the week and forgo meats! But since I am nursing, I have to stick to my once or twice a week unfortunately. I seriously have to portion it out to stick to those darn guidelines! Maybe if i didn’t eat so much at each sitting I could spread it out more 🙂

I loved Forks Over Knives, also found it very inspiring. I think this will be a great start for you. I’m no where close to being vegan either but believe in reducing animal products and head toward more plant foods. Can’t wait to see your updates. This is a great idea for Lent! I’m giving up all things I consider a “dessert” because I mostly eat them out of habit more than hunger or craving so it’ll be a good boost in getting over that habit!

I’ve been a pescatarian (with a brief period of vegetarianism and a brief period of eating poultry, both of which are gone now) for probably 8 years!

What a great decision to give up meat for Lent. My hubby and I also recently watched Forks Over Knives and it has definitely influenced food changes in my life. I’m vegetarian now, and some days of the week I do the vegan thing too. It’s been a good experience to try lots of new foods and recipes. And I definitely feel better!

We have very similar challenges going on!!! I’ve had veggies & salmon for the past few days, and I think I’ll try my best to avoid everything but seafood as well. Forks over knives was awesome!

I saw Forks Over Knives with my mom a few months ago. I’ve been a vegetarian for a while now but it made me reconsider a lot of the animal products I was still eating (cheese, butter, and eggs mainly). I am not ready to be a vegan 24/7 so for right now I call myself a “part-time vegan.” Good luck with the pescatarian eats!
