Welcome to another Munchkin Meals Link Up!
I’m jumping right into things because honestly, there isn’t much to report. Eating around here is rather uneventful and looking through the pictures I’ve taken over the last few weeks has me seriously worried that Hailey may turn into an avocado. Or a grape tomato. You’ll see what I mean!
Overall her meals are very simple. Tough I enjoy playing around with fun meals like calzones or cauliflower pizza bites, my go-to meals are typically the ones I throw together in under 5 minutes, usually consisting of a protein source, a vegetable too and a fat.
At almost 2.5 years old, here is a sampling of Hailey’s meals…
Cucumbers, Multi-Colored Peppers, Hummus, Raspberries and Black Beans
Reheated Homemade French Toast (from the freezer), raspberries, maple syrup and milk.
Annie’s Mac ‘n Cheese with Edamame and Red Peppers
Greek Yogurt with Chia Sprinkles and Raspberries with Granola on the Side
Homemade Black Bean Burgers on a Wheat Bun with Avocado
Pasta Salad from the Fresh Market Prepared Foods Section, Goat Cheese, Grape Tomatoes and leftover Pot Roast
Deconstructed Salad: Broccoli, Carrots, Goat Cheese, Avocado and Hummus
Applegate Farms Organic Hotdog, Multi-Colored Bell Peppers, Avocado and Hummus
Homemade Tuna Fish Salad, Lemon Garlic Green Beans and Shredded Mozzarella
Shredded Beef, Kalamata Olives, Carrot Sticks and Lemon Garlic Green Beans
Applegate Farms Organic Turkey, Brown Rice Crackers with Laughing Cow Cheese, Pickles, Kalamata Olives and Grape Tomatoes
Salmon, Quinoa Pilaf with Goat Cheese and Almond Slivers, Grape Tomatoes

hailey eats kalamata olives. this is the best thing i’ve read all day. i am obsessed with those things lately and to read your little tot loves them too…well that’s just precious!! she’s got some mature tastebuds!

I just mix milk, eggs and vanilla in a bowl, then soak a-few-day-old homemade bread in the mixture before sprinkling with cinnamon and grilling in a skillet. No real recipe! I’ll take better note next time of measurements 🙂

So impressive! Hailey is allowed to babysit my new baby in hopes of showing her how to eat! I’ve lost all hope with Wyatt at this point.

I hope Na loves pickles and olives too. And, grape tomatoes, let’s be honest!! I think my favourite part about little munchkin meals is getting to put everything into bite sized pieces for them…and the plates 😉 haha

L had very similar eating habits at 2.5… I hope they come back soon! Now she won’t touch turkey or any green veggie (except avocado) or beans or cucumbers… the list goes on, sigh. I hope it’s a short phase we’re in! Hailey is one lucky kid- these all look fantastic!!

These posts are so very helpful, so thanks for doing them! My son’ seating is getting better, although we still have not mastered spoon use 101! So messy! I did take your advice about mixing soup that the grown ups are having for dinner with rice or quinoa, and that has worked out great!

Oh I’m so glad the thickening trick worked! Those spoons are tricky, so the more practice they get with thicker foods the better in my opinion 🙂

I love the Munchkin Meals posts! I’m always interested in what other kids are eating because sometimes I feel like we’re so stuck in the same old meals rut for the kids. Nothing I see is too groundbreaking, but sometimes it really helps to see things presented in meal format!
I’ve never thought about black bean burgers! My (almost) 4yo son isn’t a huge meat eater, but I’ll bet he would like black bean burgers. Those would be great to mix up and keep on hand. Thanks for the idea! I also really need to try your quinoa trick for thickening soup. Great idea! My 1yo daughter is just getting started with a spoon. She does pretty well with thick food like yogurt, but thinner soups just don’t make it to her mouth!
Favorites in our house lately have been Mexican Black Beans in the Crock Pot (just a pound of dried black beans, chicken broth, diced tomatoes, bay leaf, cumin, and chili powder) these are good on their own or in quesadillas. Also, Chicken Apple Carrot meatballs make for a pretty quick meal. I just mix them up and bake them off and they reheat well too!

Not bad at all, haha! I eat everything she eats, too, but grown-up-meals just doesn’t sound as catchy as Munchkin Meals 😉

No link up, but I love seeing what other toddlers are eating, especially since my guy has been super picky lately. I was in shock when he actually ate eggplant last night (breaded, frozen kind from Trader Joe’s). I considered it a small victory. 😉

I try to switch up Jackson’s meals as much as possible, but sometimes I feel like I’m getting into a rut. Thanks for some fresh ideas (even if they may not feel fresh to you!).

I LOVE looking at Hailey’s food. She eats so healthy! Too bad most adults couldn’t eat like this. I hope that when I have a baby some day, they will develop the good habits that you are instilling in Hailey! You rock, mama!

Did she eat the beef? What about the tuna?
I had the shock of my life last night when R ate about 6 oz of chicken leg and thigh meat. It is such a rare thing to see him eating any animal protein.

Beef- about half of it and she ate more of the tuna. H’s first choice isn’t meat either, though I have the best chance when serving her fish or chicken.
What kind of seasoning did you put on the chicken that R liked??

R likes chicken legs or breast that are cooked bone in skin on. Doesn’t matter what seasonings as long as the meat is moist, fresh, and right off the bone.

Oh my gosh! I thought it was just Emmett that refused to eat animal protein. He loves his carbs and fruit, and some veggies…but anything heavy in protein, he has no interest in.

I just realized you started this when Hailey was 9mos! I’m going back and reading. My little guy is almost 7mos and his appetite is growing. He ended up starting solids earlier than I’d planned, so we had to do purees instead of BLW like I’d hoped. We’re starting to try table food, especially since he has 5 teeth.
When I put food on his tray, he picks it up and drops it over the edge 🙁 But he’ll eat it out of my hand. I think he’s got good taste though, he turned his nose up at the pureed chicken I made him but loved almond parmesan crusted chicken off my plate.

Thank you for Munchkin Meals…2 questions: I am assumming by the pictures that Hailey is now out of the high chair and in a booster seat at the table? Also drinking straight out of a cup. No more straw cups, right? Just wondering when to transition my 2 year old from high chair to table…can anyone else reading give advice or tell when they made the transition. Thank you.

Do you know how lucky you are that your kid will eat all of that?? My 2 year old would look at me, then laugh, and then throw it all on the floor if I tried to give him something other than grilled cheese, nuggets, pretzels, or yogurt. I wish my child had half the curiosity and interest in food as others.
