I’m playing along with WIAW today because I haven’t done a food diary in a while. Let’s start in my kitchen and what the scene looks like every morning around 8:15.
Smoothie: almond milk, protein, half a banana, peanut butter and oops- out of spinach.
I’ve been on such a smoothie kick. Reasons being that Hailey loves pushing the buttons, I get to play with my new blender (to justify the purchase in my mind!), it tastes like I’m drinking a milkshake for breakfast and those suckers keep me full until I eat lunch.
We packed up and headed to Davidson for Kaitlyn’s well visit, but arrived early and decided to wander around.
I think Davidson is the cutest and we couldn’t not wander into Summit Coffee, an always-bustling adorable little coffee house.
Iced unsweet green tea for me and a breakfast cookie to share with Hailey.
A picnic by the playground took us right up to appointment time.
The appointment went well and we got Kaitlyn’s stats (my favorite!). She is now 22.5” long (90th percentile) and weighs 9 lbs 3 ounces (50th percentile). Not too shabby at all for my previous little peanut!
PS- her hair is starting to fall out a little. Sniffle!
Once back home I high fived myself for taking time to do meal prep on Sunday.
It’s my first time making salad in a jar and I must say I’m a BIG fan. I think I’ll be adding these into my typical Sunday prep. Since lunches have been the hardest for me to manage since having two kids (Hailey is usually tired and floppy by lunch time and Kaitlyn usually wants to eat too), it’s amazing to be able to just grab one of these and have a fresh meal ready to go.
Spinach, chickpeas, carrots, green onions, red peppers, cucumber, goat cheese and Italian dressing.
Later that afternoon came lunch part 2.
Homemade farmers market veggie tomato soup. With sprinkled red pepper flakes.
Full disclosure: this recipe creation was supposed to be a sauce. It totally can be used that way (I’ve been mixing it with brown rice for Hailey’s dinner), but I like it so much I’m eating it as soup. It’s packed full of fresh veggies!
The afternoon flew by with a little help from markers. The best part of having kids? Getting to play like a kid yourself. I mean, when is the last time you just sat down and colored?
I’m quite proud of my giraffe… minus his face. Clearly I don’t know what a giraffe face is supposed to look like.
David was gone all evening for work so by the time I had both girls fed and asleep, I was starving. I heated up leftovers but didn’t take the time to make it pretty. Hunger won.
