I love sharing our weekly meal plans mostly because I archive them all here and can go back and reference them when I hit those inevitable meal planning ruts. I’ve been trying a couple new recipes lately and thought early summer would be a great time to share them so you can add any that look tasty to your line up!
I’m not sure if sharing my list is helpful, since it doesn’t include items I may need that I already have the pantry. However, I’m a pretty curious person and like to see how other people write and plan grocery trips (strange?), so here it is, the mother-ship of my weekly meal plan.
I was a bit thrown off on my grocery shopping day, so this list spanned a Thursday-Wednesday. I talked with the Whole Foods produce department last time and learned their produce trucks come on Monday and Wednesday so now I’m thinking of switching my shopping days to Thursday. #groceryaddictproblems
Anyway, let’s get to the food!
Homemade Pizza
I used my bread machine to make the dough, then we baked it for 5 minutes before topping it with our standard: pepperoni, onions and mushrooms followed by fresh mozzarella slices. Perfection every time.
Mom’s Night Off
We ended up taking the boat to the Blue Parrot where I was so hungry I devoured my shrimp Caesar wrap before I could even snap a photo.
Chicken Gyros
The fillings for this Greek chicken wrap consist of whatever sounds good to you. I used iceberg lettuce shreds, red onions, tomato, cucumber, kalamata olives, grilled chicken, feta and parsley.
But what brings it all together is the Greek Feta Sauce. It blends up quickly in a food processor and really makes the wrap. Plus I had leftovers to use on salad the next day- so delicious!
Cheddar Jalapeno Chicken Burgers
Does anyone else follow What’s Gaby Cooking on Snapchat? I think she is hilarious, but today is about her food. I’m new to her recipes, but will definitely being trying more after loving these cheddar jalapeno chicken burgers. I’m not usually a big chicken burger fan but these stayed together on the grill and were packed with flavor. Plus, topping it with guac is pretty much the best idea ever.
Lamb Gyro Burgers
More burgers? More gyro? I blame summer, but they are two of my favorites, so yes. This recipe for the burger mix-ins is still one of my all-time favorites.
Crockpot Butter Chicken Over Basmati
I used this recipe and while it was fine, it just didn’t have that deep, authentic Indian taste I’ve been searching for.
I asked my instagram friends about it and got some great feedback! This chicken tikka masala recipe came highly recommended, as well as this paleo butter chicken and this 30 minute masala sauce. Two go-to sites for Indian recipes were also recommended: Hooked on Heat and Indian Simmer.
Locals, I love Mint in Mooresville but THREE different people on instagram said I needed to try Sangam Indian Cuisine in Cornelius. I’m so excited- it looks like I have some Indian food experimenting ahead of me- YUM!

Steak Fajita Bowls
Talk about a meal that never disappoints. Rice, lettuce, sauteed fajita veggies, grilled steak, the trifecta (salsa, guac and sour cream), with red onion and cilantro. Never. Gets. Old.
My go-to breakfast lately has been a garden veggie saute (truly, the zucchini and tomatoes have been from our garden!) with onion and a perfect over-medium egg or two on top.
Sometimes I’ll slice of some avocado to go with it or splash on some hot sauce. Since I prefer savory breakfasts, this hits the spot and actually keeps me full for a while, especially with the added avocado.
Lunches switch between sandwiches, salads and this couscous salad, which I found myself eating the entire contained of in one day by myself.
Clearly I’ve been loving all summer has to offer lately with its fresh fruits and veggies, along with anything I can toss on the grill!

Pizza is such a great family favorite for us, too. I need to try pre-baking the dough. Do you put on the tomato sauce already or do you bake the dough on its own?
As for summer recipes, I love salads like the Spring Roll Bowl by Pinch of Yum, or Quinoa salads.

Amazing that you archive your meal plans…now why haven’t I thought of that!? What a great idea. We’ve been doing a lot of grilled salmon here with grilled veggies. There are tons of easy salmon marinade recipes out there. Trying an Ina Garten one for tonight! Salmon is SO fast on the grill and lots of times I can get it on a special mark down if I hit the store at the right time. It’s still fresh for dinner that night.

Favorite summer recipe has to be quiche and salad – easy to make ahead and one of the only meals I enjoy eating hot even when the weather is also hot!

Both burgers look amazing!! I love anything with watermelon and mint in the summer. I add mint to lemon water and puree watermelon to use for popsicles.

I have been loving gyros lately but never would have really thought to make them at home. Thanks for sharing the sauce recipe!
When I make my list, I categorize it by how the store is laid out (so produce, dairy, etc.) but I like how you did it by meal. Too many times I just make a huge list and forget why in the world I need parsley and if I can’t find it or run out of time, I often omit things that are essential to recipes. I should start making my list like that!

LOVE your meal plan posts!! I am def going to try the chicken burgers. Thanks for sharing 🙂 Your past recipe for the buffalo chicken wraps have become a staple in my house….so yum !! As for summer recipes, we are big on using the grill this time of year. And love veggies from the garden..although ours are not quite ready..soon I hope 🙂 A big favorite is a tomato, arugula and feta salad 🙂

The chicken burger recipe sounds great, I added it to next week’s dinner plan! During the summer I find simple is better (and easier!). I try to grill as much as possible and its typically some kind of burger, steak, chicken or fish. And with all the yummy veggies, its easy to grill up some of those as well which I just rub with olive oil, garlic, salt and pepper.
I don’t have a recipe but last week I made Asian Turkey burgers with a spicy mayo and it was SO GOOD! The leftovers were great for lunch too! I ate mine over lettuce but my husband ate his with a bun.
