Big news around here…
…yesterday my BFF gave birth to her first baby- a little boy!!
She did fantastic and little Crawford is as cute as they get!
It was such an awesome experience to get to spend the day at the hospital and be there (well… not right there, but you know) when he was born!
Before I left for the hospital, I decided to whip up some cookies for Christen. I had heard from other mommy friends that ‘lactation cookies’ were amazing. At first they made me nervous… cookies that… make you start to milk??
But after further investigation I learned that they are essentially cookies with redeeming health properties that help increase milk flow in new mommies. However, for the rest of us, they are just a healthified cookie, and the best part? They are delicious!
1 c butter, 1 c sugar, 1 c brown sugar, 4 Tbsp water, 2 Tbsp flax seed meal, 2 eggs, 1 tsp vanilla, 1 c flour, 1 c whole wheat flour, 2 tsp baking soda, 1 tsp salt, 3 c oats, 1 c dark chocolate chips, 2-4 Tbsp brewer’s yeast.
It’s true that the cookie still starts with butter, sugar and sugar, but if you’re going to enjoy a cookie, why not choose one that contains the rest of the bolded, nutritious ingredients?!
Start by combining the flax meal and water- set aside for 5 minutes. And preheating your oven to 350 degrees.
Meanwhile, beat together the butter, sugar and brown sugar.
Once well combined ( a few minutes), enroll a little help from an expert egg cracker…
Then add the vanilla and flax meal mixture. Continue to beat on low.
Stop and lick spoon… juuuuuuuust kiddin’ 😉
In a separate bowl, combine flour, wheat flour, baking soda, salt and yeast.
Mix it all up, then slowly add it into the mixer bowl, a little at a time, while continuing to beat the mixture.
Remove bowl from mixer, pour in oats and dark chocolate chips (I used an over flowing cup of chocolate chips ;)). Mix well.
From there, make sure your oven is preheated to 350 degrees, then accept the fact that you are going to get your hands a little messy while you form the dough into balls.
Bake for 12 minutes…
– and wah-lah!
They really so taste amazing! Proof? Hubbs chowed down on them… once I promised him that they wouldn’t cause him to spontaneously begin to lactate 😉
These might be my new favorite cookie!!

I’ve also heard a nice glass of dark beer, like Guiness, helps to bring the milk in. No, seriously! Maybe it’s that brewer’s yeast that does the trick!
