Does any one else just absolutely love the 4th of July? I DO! Besides Christmas (and maybe Thanksgiving), I think it’s my favorite holiday. The American pride, the friends, the cookout, the water (lake, beach, rivers that I always seem to be at around the 4th)… I just love it all!
This 4th of July is mine & Hubbs’ first experience hosting people. I am very excited that we have about 10 people coming to hang out with us. However, that means I have a lot to do to get the house in order, and my excuse that “we just moved in” is wearing thin, since we’ve now been here for 4 months. Needless to say, today I’ll be running around like a crazy person to get things clean, food stocked and beverages cold. I am usually a pretty healthy eater (duh… you read about what I eat…), but when I have groups, I feel the only way to feed everyone without spending a fortune is to go a little less healthy (burgers, buns, pretzels, etc).
When you host people, do you serve a totally healthy spread? Or resort to burgers like me? I’d love some tips if you have them!
To fuel my day, I started off with a satiating breakfast (I guess my egg kick has lasted the entire week!)
That’s a whole wheat sandwich thin, 1 egg, 1 egg white, 1 slice of bacon (Obviously I’ve been on a bacon kick too!!), and a sliced tomato.
I feel fueeeeeeeeeeled! 😀 Time to get going… What are your plans for the 4th?!

Don’t you just love those days when you feel uber productive and accomplish over half your to do list before noon? Loves it!! But I’ve burned off a lot of energy, so time to refuel.
Starting with a purple monster!
As you can see it was all raspberries- yum. Plus almond milk, a little whey, some spinach and flax seeds. It was thick and delicious…almost like sherbet!
Then I had about 12 rold golds with some Sabra roasted red pepper… Yummy.
Off to check off a few more to do’s! What a beautiful day in nC!

I’m anticipating that most of you are soaking up the bliss that is 4th of July weekend and not noticing my slacking on the blog last night…
We had a turn of events yesterday that threw off my whole afternoon/evening. We had guests arrive too, and with trying desperately to get a working boat for the weekend, it was 9:00 before I realized none of us had eaten dinner. So on short notice, we all snacked on hummus and pretzels, a few chips and salsa, digiornos pizza (I had 2 slices of cheese) and I had 2 dragonberry rum and sodas… Which were delicious!
Picture of perfect health? No way. But sometimes you gotta go with the flow. Today I’ll be playing on the lake and hopefully watching some fireworks from the boat!

It IS a gorgeous day in NC!! The weather has been so sticky and unbearably hot and today I walked outside during lunch and hey! No humidity, a nice temp, a BREEZE… I am so happy, and the rest of the weekend is shaping up to be the same 🙂 I hope you have a great holiday!

I’ve never been in the US for the 4th because my fam always seems to travel during that time, but the good thing about American Pride is that American’s find themselves wherever they travel, so I was still able to celebrate with new friends! I hope you had a great time hosting!

July 4th is one of my favorites too, second only to Thankgiving! (2 holidays involving a lot of FOOD!). Its so hot in the NorthEast today your smoothie pictures are inspiring me to go make one too!
