We get stuck in ruts around here sometimes because I tend to rely on the same staples week after week. Luckily with the addition of leftovers, I can usually manage to keep Hailey’s meals very quick (5-10 minutes to put together MAX), simple and well-balanced. Here are 10 meals she’s been chowing down on lately.
Leftover salmon. Sweet potato cubes baked with olive oil, salt and pepper. Sautéed broccoli with olive oil, lemon juice and salt.
Scrambled eggs with peppers. Avocado slices. Orange slices.
Ground turkey, red peppers and black beans sautéed in olive oil with cumin, salt and pepper. Salsa for dipping. Avocado bites.
Oatmeal with chia seeds and honey with blueberries and orange slices.
Leftover gyro lamb burger. Quinoa. Cherry tomatoes. Grapes. Greek yogurt Tzatziki for dipping.
Cream cheese sandwich. Avocado bites. Orange slices.
Leftover chicken mixed with brown rice, broccoli, olive oil and parmesan cheese.
Scrambled eggs with onion, bacon, cheese and orange slices.
Roasted potato wedges with ketchup. Sliced tomatoes with salt and pepper. Goat cheese crumbles with pistachios and honey drizzle.
Roasted sweet potato rounds with ketchup. Edamame with salt. Cheddar cheese.
