Yesterday started off with my new normal.

Hi. My name is Brittany and I’m addicted to goat cheese.
Breakfast
I used my beloved coffee frother to whip up a cup of decaf with 2 Tbsp of Breve Cream. Mmm. I sipped on it while I devoured my 1 egg, 1 egg white omelet that contained spinach, onion, green pepper, GOAT CHEESE and topped off with fresh salsa.

Mid-Morning
Before heading to the office (the real one, not my home one- thus why I’m actually wearing make-up and had to show you to prove it), I grabbed my JP gummies and a perfect apple. I’m so picky when I pick out produce.
PS- Gotta love the iPhone picks… I don’t look washed out or anything.

Lunch
I met Hubbs for a quick lunch at Fusion Bowl- a local Chinese fusion spot that I love. As soon as we picked the spot, thoughts of sodium raced through my head. What a tough spot to navigate! But I was dedicated.
I skipped the hot and sour soup and opted for the salad with ginger dressing on the side.
For my entree, I ordered shrimp and broccoli with brown rice, sauce on the side.
I loved controlling how much sauce I used and continually congratulated myself on my well-made choices (annoying, right?)
I ate about 1/2 the rice and eyeballed that I used about 1/4 c of the sauce.

Afternoon Snack
Cucumber slices with 2 Tbsp Sabra hummus and a Chobani Champion with 1.5 tsp of Chia seeds.

Dinner
Hubbs was on a business trip, so dinner was on my own. I made myself a plate of delicious sweet potato rounds (I LOVE these- I use paprika, garlic powder, pepper and a bit of salt). I also had a big ‘ol salad of romaine and spinach with carrots, cucumber, goat cheese, a sprinkle of onion and Catalina dressing.

I followed it up about an hour later with a delicious concoction from my childhood.
Oh yes, that is peanut butter and ‘jelly’, but mixed together (like my mom always made it). It’s amazing!! I used it as a dip with 1/2 a whole wheat pita. Baby D must have liked the sugar, because a few minutes after eating it, I felt thump thump thump!

Eeps! That’s a little low in calories. I think in my efforts to keep sodium in check, it caused my calories to be a little lower than usual. But on a positive note- wahoo– look at that low sodium total!!
I never felt hungry through out the day, so I’m not too worried about the low calories for a day. However, it might explain why I woke up at 3:30 am and ate a banana nut muffin.

I am right there with the goat cheese addiction. I was so excited when I went to the Farmer’s Market last weekend – there was a local goat cheese distributor that made ginger crystallized goat cheese. Holy yum!

I’m the same way with food. One day I’ll feel like I can’t stop eating and the next I won’t ever feel hungry. I’ve noticed an uptake in my sodium levels lately and have been working to counteract that as well.
My M-I-L bought my husband a book called “The Expectant Father.” The author is a little whiney, but it says that when momma eats something sweet baby will slurp the amniotic fluid more quickly. I love those little thumps 🙂

Sweet Potato Rounds!! Look delicious. I love sweet potatoes.. I think I may just need to round them for my next meal! I am a little partial to making my own sweet potato rides..but I am interested in seeing the difference in textures!
