Munchkin Meals Link Up!

Welcome to another Munchkin Meals!

For those who requested it, here’s the link to my segment on FOX News Rising. Everyone there was so sweet and wonderful and I had a such a fun time!…despite shaking like leaf. Seriously. Can you tell?

Hailey is now 14 months old and still an adventurous eater.  Fingers crossed she keeps it up! She’s at the point now where I can notice a higher grocery bill with feeding her. I attribute this to string cheeses, more Greek yogurt, and more frozen vegetables to keep on hand. I don’t mind in the least as long as she keeps eating it all!

Look familiar? Yes, I forgot to snap a picture. This is my breakfast, but it’s also pretty much Hailey’s. She eats an egg scrambled with peppers and onion and a little salsa stirred in for extra flavor. She loves fruit with breakfast and always has a whole banana and lately, half a clementine, too. Sometimes she’ll have a few pinches of the soft part of the bagel and always washes it all down with her milk.

Lately leftovers have been our best friend for lunch! I’ll use leftover roasted vegetables and brown rice to create a quick stir fry with olive oil. Other times, it’s straight leftovers, like leftover roasted sweet potato, roasted Brussels sprouts and steak. Roasted vegetables are definitely her preferred method of preparation. I can’t blame her; they’re delicious!

Hailey isn’t much of a meat lover. She’ll eat a few bites of chicken or steak before leaving it behind for more veggies. One exception is salmon. She’ll put away some salmon!

Snacks lately are string cheese or Greek yogurt and pomegranate arils. I love how easy these are to store and grab in a hurry, once you do the work of extracting them.

Dinners vary, but I’ve found a quick and healthy go-to, avocado pasta!

1 ripe avocado, mashed in a bowl with salt, pepper, lemon juice and a little olive oil + whole wheat pasta (I prefer elbow- perfect size for little fingers) and viola! Dinner. Hailey approved.

You did such a fantastic job! And you don’t look nervous at all. Congrats again! By the way, are you a health coach via INN? I’m studying with them right now…
Love the avocado pasta idea. And we were just eating a pomegranate today. It was a huge hit!

I’ve heard fantastic things about INN, but I am certified through ACE as a fitness instructor and a lifestyle and weight management consultant. Long, fancy title, huh? ;)

Oh boy..yeah..I am a at the store pretty much daily! Don’t even ask me about the bill haha. I do make a lot of things last though. The freezer is my best friend! I make chicken ahead and freeze, and always keep frozen organic veggies around. It’s the snack foods that kill me. My girl has expensive taste…nutritious taste though so it’s justified ;-)

PS- I see what you mean about adding in the age in the title for Munchkin Meals. I LOVE that idea. I just need to figure out how to explain how to do it…

Hmm maybe say to add in the “name” section of the link up to add their chil’s age too?

PS–you did awesome on the news! I watched it earlier! I would have been shaking and sweating!

And too funny about pom and Greek yogurt. Ella had that for the first time yesterday! She ate a few bites, pretty sure she enjoyedit. I love the idea of just snacking on them like “gummies” as that newslady called them!

You did a great job! I couldn’t tell that you were shaky. We’re definitely trying that avocodo pasta! We love avocodo at my house! We just had avocodo and tomato quesidillas last night. Yum!

You were so great on the show!! I am intimidated by pomegranates, but I’ll try the technique you described in the clip. I don’t have a blog to link up, but one of Amy’s favorite meals is chicken tortilla roll ups. If I’m short on time, I’ll microwave a tortilla with whatever frozen veggies I have, chicken, and cheese.

Great job! How exciting to get to do. Could you give tips on roating veggies? And your favorite ones to roast? I think I just have a heavy hand on the salt, and that is why my husband isnt liking them. :)
