For the past month or so I haven’t paid much attention to what I’ve eaten. That doesn’t mean it was unhealthy because I truly enjoy eating natural foods that energize me. However, in my attempts to keep up with Hailey, my meals have been a bit more ‘grab what you can when you can’, meaning more carb heavy. I haven’t thought much about it, but now that she will be one month old tomorrow and I’m closer to feeling normal (though I’m not healed yet), I want to really start focusing on my post baby body goals.
Today I decided to bring back the calorie count version of WIAW- out of curiosity. Does this mean I’m going to count calories everyday? Heck no. I don’t have time for that. But I am going to try and be more conscious about balancing out my carbs with those other nutrients and making sure vegetables appear more often in my meals.
The good news is I’m clearly doing OK, because Hailey isn’t having any problem packing on the ounces… just look at those cheeks!
Here we go…
A hot cup of decaf with 1 Tbsp Pumpkin Spice Creamer.
With 1/2 whole wheat bagel topped with 1 Tbsp chive and onion cream cheese (redued fat), 1 1/2 eggs (3 eggs, split with mom!) with mushrooms, peppers, onions and spinach.

I’ve been loving this combo lately, even though it may sound odd! A bed of spinach topped with 1/2 cup quinoa (I made a big batch on Sunday to eat all week) and 1/2 cup kidney beans. Microwave for one minute, then top with goat cheese and a drizzle of Newman’s Own Lightened Up Balsamic Vinaigrette.

Thoughts: I’m happy with the amount of whole foods I got in yesterday. I must be honest and say that it hasn’t been like that everyday (usually a bit more Kashi GoLean Crunch and turkey sandwiches and apples sneak in- you know, basics).
What is your favorite grab ‘n go healthy food?
I’m always looking for new, easy ideas!
Gina @ Running to the Kitchen says
Carrots + hummus has been my recent obsession but this changes weekly! Your eats look great! Especially those stuffed shells, Mmmm.
Sarah says
Um…I want your breakfast. And your snack!
For grab and go foods, I really like bars (luna bars, granola bars, more whole foods-based bars), but I know those will get old.
A friend of mine are making some healthed-up muffins to keep in my freezer, but I know I’m going to need some savory options, too. I like your turkey sandwich idea!
Brooke @ Veggie Table says
That breakfast bagel – I. want. now! Love seeing Hailey pictures!
Erin @ The Grass Skirt says
I love Hailey’s little cheeks! She’s so precious. My favorite healthy foods are avocado and tomato on sprouted rye, apples, carrots and hummus, smoothies, and Larabars. It is all about convenience! 🙂
Rachel @ Not Rachael Ray says
I think you’re doing great! Definitely important to give your body time to heal–I know all about that, my daughter’s big head did a number on me 😉
Hailey is SO cute! Keep the pictures coming.
Alyssa @ Life of bLyss says
I love Clif bars for grab and go food.. I don’t know if you’re going for fresh, but those and bananas and raisins are my go-to grab and go snacks. 😉
Melissa @ Be Not Simply Good says
Bananas and almonds are my favorite grab and go snacks. Can’t believe Hailey is a month old; what a little sweetie!
Lauren says
Almonds and raisins are my favorite thing to grab for a snack, but I just bought some Chobanis for a change of pace. For someone who has to grab things quickly, you look like you’re doing awesome. Dare I say you eat better with a baby on your hands than I do without one?
kaliesthoughts says
SHe is so cute! I love HAiley!
Rachel @ My Naturally Frugal Family says
Your baby is gorgeous and so healthy with the cheeks that you just want to squish.
Your food looks great as well. Just a month into it it’s good to see your calories but don’t obsess. It took nine months to get yourself where you are it can take a while to get back to “normal.”
P.S. I am loving that kale, quinoa mix YUM!
Jen says
Looks like you’re doing great, Brittany! Your lunch is one of my go-to meals. I always top greens w/ quinoa and heat it up and top w/ goat cheese and balsamic vin. Too funny!
I cannot believe your precious little girl will be one month old tomorrow! Time flies!
Kristin @ eat healthy. be happy. live well. says
Looks like some good eats 🙂 Hailey is too cute and I can’t believe it has been a month already!!!
My fave grab and go snack lately has been to make a big batch of smoothies and put into half-pint mason jars in the fridge. I can just grab one when I need it. I also pack one in my lunch often for an afternoon snack!
Jessie @ Graze With Me says
I can’t believe it’s been a month already. Time certainly does fly by when your days and nights blur together, doesn’t it?
I tend to go for oatmeal, cereal, cut up fruit, sandwiches, yogurt, snap peas, crackers, string cheese and simple meals these days. It’s definitely all about one-handed convenience eating! Luckily as long as I plan ahead I can manage to whip up something for dinner most nights. My husband has been smoking meats and rotisserie-ing (?) chickens on his new grill so I have premade ingredients at hand. Makes it easy!
Hailey is too cute!
Sarah says
I don’t think you should berate yourself too much for the carbs as long as they’re whole, like the quinoa. Remember, whole grains are still plants! Maybe adjust your thinking to “eat more plants” instead of “eat less carbs”. Keep it positive!
Tiff @ Love Sweat and Beers says
Yum! Thanks for that first snack idea. I think I’d really like that.
PS – She’s adorable as ever. 🙂
Lindsay @ Schnoodle Soup says
I like to make my own trail mix. Not exactly a meal, but paired with a piece of fruit, it makes quite the lovely snack. Just some cereal (Kashi or whatever), few nuts, few raisins or dried cranberries and, obviously, chocolate chips
Caitlin says
Mm that quinoa and beans on spinach medley looks yummy! I love using spinach as a basis for everything.
Corey @ the runner's cookie says
Love the baby pictures! I had cheeks like that when I was little too 🙂
My favorite go-to healthy snack has been microwave protein muffins with nut butter – they’re substantial enough to keep me full while I study!
Jen@foodfamilyfitness says
Aww! She is so dang cute!!!!
I’m loving your meals, your lunch looks so good! i’ll have to try that one 🙂
Amanda@BlueDrishti says
Yum, your breakfast looked delicious! My favorite quick snacks lately have been nuts and trail mixes from Trader Joes. I keep them at my desk at work to snack on. Lately I have been making big batches of soups or chili in my crock pot to bring for quick lunches during the week.
Brittany says
I love that it’s SO close to soup weather- it’s my fall/winter favorite.. and I love that you can make a big batch to eat all week- great reminder!
Debbie (Accidently Delish) says
I’m glad you can count your calories, but know you don’t NEED to. Listening to our bodies is one of the hardest things to do. I found when I counted calories though it was so much easier to restrict because I would think “I’ve already consumed this many, I only have this many left” It is so much easier to not count, but still be aware of what’s going in my mouth. I eat when I’m hungry, I just try and make healthy choices.
(ps. I am recovering from an ED, which is why I was so crazy on counting calories. I love reading blogs where people can recognize that calories are not law. Reminds me that my body is the most important thing)
Brittany says
Great reminder! I do like to check in on my calories occasionally, but agree that getting too focused on counting them can drive you crazy. Definitely important to listen to your body 🙂
Jenn L @ Peas and Crayons says
Glad you’re feeling better and heading towards normal again love! and Hailey makes me melt…. ohmygosh girl I can’t say congrats enough!!! =) so congrats x 100000001
Kelli H (Made in Sonoma) says
Lately I’m loving quiona bowls. Kind of like yours but it’s got more Mexican flavor to it — so good!
Your eats look great though!
Brittany says
Now all I can think about are Mexican style quinoa bowls! Next week’s lunches perhaps? Thanks for the idea!
Lee says
I like to make tortilla pizzas. Those are pretty quick and easy.
Michaela says
I hope you will loose weight soon!
My fav to-go snacks: fruits, fruits, fruits, wait, did I mention fruits? Also hummus and vegetable crudités, nuts and dried fruit. Sometimes also leftover baked goods 😉
blackhuff says
Although you did eat it more carbs while breastfeeding and she keeping you busy, you still eat good. Good carbs and not in abundance. This helps a lot in keeping weight constant and you healthy. For this I admire you cause not everyone do it.
Beautiful photos of your little one 🙂
