We’ve sure had some wonderful weekends lately. There really is something to this whole unplug and don’t make plans thing that I’m loving. I really am soaking up these last weekends as a family of 3. Saturday was rainy all day so we tried a new breakfast spot.
For my local friends, Sun Up Café is now open at the new Langtree at the Lake (exit 31). It has a cozy, but open feel and the food and service are great! David also gives the coffee a thumbs up, which is rare around Mooresville. Give them a try!
After breakfast we spent a hour or two at Barnes and Noble (one of my favorite rainy day family activities) before hitting up Total Wine and stocking up on, well, wine! I picked out this bottle to celebrate baby girl’s arrival when she decides to come.
The Easter Bunny paid us a visit on Sunday.
Hailey loved it, though she wanted to open each egg as she found it. Since some contained quarters, she also wanted to run upstairs and put it in her piggy bank each time she found one. Needless to say, I’m not sure we made it through all 25 eggs, but we sure had fun! The rest of the day was spent on family adventure walks, swinging, hitting up the farmers market and bouncing on the trampoline. It was gorgeous out and a wonderful day overall.
Now, onto the food! For those that are newer readers, each week I share last week’s meal plan in pictures and recipe links (when appropriate). Last week was a little different because we ate out more than usual.
Monday was spaghetti squash (prepared this way), topped with meatballs (from the freezer) and marinara.
Tuesday was chicken piccatta over linguine (using the recipe I linked to but with decreased butter and oil, plus extra capers- I can’t get enough!) and steamed broccoli.
Wednesday my mom showed up at my surprise baby shower and even brought chicken marbella with her for our dinner! I made a brown rice pilaf and a salad to go with it.
Thursday my throat was on fire, so dinner was a take-out cup of hot and sour soup and two coconut water popsicles.
Friday was take-out vegetable pizza with pepperoni from Brooklyn Boys- our current favorite if we aren’t making it at home.
Saturday was out again, this time it was our first visit to Eddie’s Seafood & Raw Bar (which for locals, took over where Vinnie’s on the Lake was previously- exit 33). It felt much cleaner and nicer than Vinnie’s ever did and my Manhattan Clam Chowder was slightly spicy, packed with clams and delicious. We will be back!

I love that Pinot Noir! I had it randomly at a restaurant a few months ago and it was so good I had to google it and find out where to buy, which I NEVER do with restaurant wines. Hope ya’ll enjoy it once baby girl is here!

Wine… how I miss thee. That’s what I’m most looking-forward to having food- or beverage-wise after baby comes. It’s fun you picked out a bottle to ‘indulge’ in oh-so-soon! And capers…what makes salty so appealing during pregnancy?!? I can’t get enough of those, pickles and olives. Last week, I created a new eggplant marinara sauce that we loved! Sounds like the perfect little Easter weekend. I think what I most look forward to in having children one day is creating new traditions and passing along my own childhood traditions for holidays. Dying eggs, egg hunts, and of course, new Easter dresses for church – the best!

Sounds like a great weekend! Yes, soak it up as long as you can! Such a cute pic of you two gorgeous ladies 🙂 My son also wanted to open each egg before putting it into his basket. We went to two different Easter egg hunts that filled them with candy I don’t normally give him. I’m that obsessive mom who brings her own healthier option to switch the bad candy out with. So I take his eggs after, switch them out then give them back. He figured out that I was taking them pretty quick so he started to open and eat what he found before he made it back to me or got it in the basket. Little stinker!

We were in Amelia Island over the weekend for a wedding and ate lunch at a local cafe. I ordered a really delicious salad with chickpeas, lentils, walnuts, feta, and a few other goodies. Going to try to remake it at home – it was so good!

Do you ever find that when you eat out a lot, you tend to look forward to those home cooked meals? I always find that if we have no choice but to eat out, after several days, I’m ready for some fresh veggies and other light foods.
