Are the seasons all wacky where you live right now? They sure are here in North Carolina! Today, for example, will be 76 and sunny (wahoo!), but the high will be 48 by Thursday. This makes me realize I probably need to buy at least 1 or 2 short sleeve maternity tops (I thought I was done, darn it!) and eat as many soups and crockpot meals as possible. Warm weather is on it’s way!
Let’s take a look at last week’s eats…
Sunday– Seafood Gumbo over Brown Rice.
I don’t have a recipe to link to because I combined about 3 different ones and made a silly amount of substitutions. This dinner worked out great because I realized I had frozen shrimp and scallops that needed to be used, which cut down on the cost of ingredients.
Monday– White Bean and Kale Veggie Stew with a Chicken Side Salad
A thumbs up for Emily’s latest recipe! I didn’t make the crunchy chickpeas to go on top, but the stew held up on it’s own. Hailey ate it, too, and liked it and mine bowl was best with a splash of hot sauce.
Wednesday– Papa Murphy’s Pizza and Salad
I made a big ‘ol salad for dinner, then life got hectic and I didn’t have time to cook, plus Hailey’s molars were giving me a run for my money, so David picked up a pizza. Great decision.
Friday– Mom’s Chicken ‘n Veggie and Regular Meat Lasagna
Mom made two lasagna’s and a salad to bring to the beach, which made Friday night’s dinner quick and delicious!
Saturday– Chicken Fajita Salad
We took Saturday night’s meal duty, chicken fajitas! I chopped all the veggies and cut up the chicken before heading to the beach, so cooking it up and putting out the toppings for the assembly line was all it took to pull dinner together for 6.
Sunday– Salty Dog Café’s Blackened Mahi Sandwich with Fruit
A late lunch also subbed as dinner before we hit the car for the ride home.

I’m mostly excited to finally get outside and use my grill! I just bought it over the winter and warm weather will definitely encourage me to use it!
Also, I loooove watermelon and all the summer fruits that are in season! Woo!

We’re having crazy weather here, too — 65 today and tomorrow, 27 on Thursday with wind chills below zero. Hurry up, spring! 🙂

Ooh! Those look so yummy. I especially want to try the bean and kale soup — looks SO good (better make it before soup season is over). Yes, our weather has been on a rollercoaster too — it was 50 degrees outside in Minnesota yesterday and people were seriously in shorts and tank tops. Today it’s back in the 20s…..break out the parkas 🙂

I am most excited about anything with tomatoes and fresh basil because I grow both in my backyard in the summer.
The weather in wonky here too. High in the upper 70s today, and back down in the 30s tomorrow. I really need to remember to check the weather each day to figure out how to dress my son before I send him to daycare.

Do you have any tomato growing tips? Do you plant from seed? I always get overzealous and plant too much, so I’d love to just focus on a few, mostly tomatoes! Any tips?

It is funny that you ask about planting from seed! Every year I have grand plans to plant from seed. And yet again, here I sit with the seeds still in packets. So since it is so late, I will end up buying seedlings from the plant nursery.
I usually get a variety of the ones we eat the most of – 1 or 2 heirloom (Cherokee purple are my fave), 2 grape tomato plants (for salads), 1 or 2 good slicers for sandwiches, and usually something different (like a golden). I do not can them, so I try not to plant more than we eat.
I plant in a raised 4×8 bed, and I do not use any fertilizer or pesticide. I try to plant herbs or garlic nearby that deter pests, and I keep and eye on them. I did so much better with it before I had my son. I hope to get him out there with me this year! So much fun!

We’re having weird weather too, but I think it’s going to take a turn to spring-fully this week. We’re looking at 70’s for the next 10 days, which is too bad, because we’re in a terrible 3 year long drought. 🙁
I am looking forward to BBQ Turkey Burgers, but I’ll still cook my warm weather meals too for a while.

When our family goes to the beach, we always prep a meal beforehand too so we don’t have to eat out so much (usually a big ham with biscuits). Just another reason why I’m looking forward to our week in the OBX!

We’ve already fired up the grill a few times! I like to cook lots of spiedies during the summer. It’s chicken on skewers with “Spiedie Sauce,” which is very similar to Italian dressing. Delicious!
