My weekend was a pretty nice combo of relaxing and productive. When David is out of town, which he was for most of the weekend, I find myself knocking things out. Important things. Like laundry. And planting tomato plants.
This tomato plant is called a PATIO tomato plant. It’s specifically designed (whatever that means) to thrive in a smaller/potted environment. Fingers crossed I don’t kill this one. Or the arugula, mint, basil, oregano, parsley and cilantro I’ve planted.
Other exciting events included grocery shopping at Target. With restocking the pantry, the bill was up to $150. Eeks.
And it took a while. Sorry, munchkin.
I found time during nap time to play around in the kitchen and created these beauties.
These, my friends, are baked banana-nut oat cups. They are individual servings of baked oatmeal that I can freeze and eat throughout the week. I nuked one this morning for 30 seconds and I can’t tell you how excited I was to not dirty a bowl. These would also be great crumbled on top of Chobani.
Each cup has 122 calories, 18 g carbs, 4 g fat, 4 g protein and 67 mg of sodium. Check out the recipe for Banana Nut Oatmeal Cups if you’re interested in an easy, healthy weekday breakfast option.
The weekend wasn’t all go-go-go. We took time to relax and ponder life’s many deep questions.
She’s either pondering the existence of time or wondering if there is more to eat in the world than just broccoli and sweet potatoes. We also attended an egg hunt!
Hailey only got 2 eggs. We’re working on her egg hunting skills for next year. Being mobile might aid her in her quest for eggs and her ability to escape from the world’s creepiest looking Easter Bunny ever.
All in all, it was a fantastic weekend and I’m ready for a great week. Was annoyingly chipper attitude an ingredient in those oat muffins? Or maybe I just have spring fever (the good kind). Either way, life is good.

Boo-allergies sucks! I always think I’ve escaped, but then they hit me late. I think the grass is what gets to me and it always comes later. It’ inevitable.

Agree with the Spring Fever and planting. Just ordered my Juice Plus+ Tower Garden and plan to grow tomatoes, lettuce, herbs, cucumbers, peppers and strawberries! Can’t wait to get it all started and have my own “organic salad bar!”

Don’t get your hopes up too much for the oatmeal cups- they aren’t too sweet, which is what I like about them. You could always toss in some dark chocolate chips for that sweet tooth though 😉

I’m doing better with the sweet tooth problem (although I do have my moments..ha!ha!)! If I added anything, maybe a few chopped apples, but I can’t wait to try your recipe first, before I start playing around with it!

We have a 20×4 garden we plant with veggies every year! It’s a disaster right now because I was way too pregnant at the end of the last growing season to take it apart. So, yeah, the dead tomato plants are still hanging out. Amazingly though we have green onions growing! Not exactly sure how that happens, but I’ll take it. Our tomato’s did awful last year so I am crossing my fingers for a better harvest!

Just a tiny bit of advice on the cilantro (it’s harder to grow than the other stuff). Cilantro bolts (goes to seed) really quickly which I learned the hard way. I’m not sure the best way to stop it but I have read some advice about planting either in succession so that you have multiple plants planted a few weeks apart that way you always have cilantro and don’t have to worry about it bolting, or what I tried to do last summer was harvest it frequently and tried to snip off any bits that might flower. Good luck with your gardening!! 🙂

I had no idea there was such a thing as patio tomato plants! I need those b/c my husband refuses to help me with a legit garden and we have like 500 deer that literally live on our property and destroy tomatoes every year I plant them. I hate that it’s still like 5 weeks until I can plant that stuff. So envious of you southerners right now! 😉

Every stage does get more and more fun! 8 days in definitely still is a crazy time. Just know that as soon as you think you have things down, the schedule will change, so all you can do is roll with the punches 🙂 Congratulations on your new baby! Last year was our first year in the house and because we had just moved we had to plant quickly. We ended up with a lot of onions, lettuce, beans, peas and cucumbers, but our potatoes, carrots, spinach and tomatoes didn’t do well. We are hoping to expand the garden this year! I would love to solely eat out of it this summer.
