I bought a $2 mushroom from the mushroom lady at Davidson Farmers Market yesterday.
It’s a call a reishi mushroom, the colorful on on the left. You’re supposed to dry it out and make reishi mushroom tea from it.
I’ll let you know if I end up seeing any psychedelic cloud swirls.
Other things on the menu this week are as follows-
Sunday– Tortilla Chips with Texas Caviar and Guacamole (taste testing dinner!)
Monday– Grilled Chicken with Avocado & Feta Salad with Green Beans
Tuesday– Tilapia, Corn and Chorizo Grill Packets
Wednesday– Grilled steak, Sweet Potato Fries and Salad
Thursday– Turkey Meatball with Pasta an Marinara

Ohh do you have a recipe or the tilapia grill packets? They sound awesome. We are having Panko crusted zuchini with brats and salad tonight!! Not sure about the rest of the week yet 🙂

1 gallon of water to 1 dried mushroom and let it steep for a couple hours. Said she sometimes throws ginger in with it. Other than that, I guess I’ll find out!

I totally need sweet potato fries on my menu this week. I wanted them badly last week but forgot to buy some and I paid for it….as in, they’re all I could think about on the night I really wanted them haha. This makes me a nerd right? It’s ok, I’m fine with it 😉 haha

Tuesday – grilled chicken, salad, and Annie’s Mac.
Wednesday- steak paninis with fresh horseradish, salad
Thursday- crockpot chicken ceaser sandwiches from meals and moves blog, sweet potato rounds.
Lunches- salads, and I want to try out sardines thanks to kath eats!

I loooove Texas caviar! Such a fun summer food and it’s nice and colorful, which makes me feel like I’m eating healthy, despite the numerous tortilla chips. I also enjoy it with those huge corn chips – the dipping ones.

We used the grill pretty much everyday last week and had brilliant dinners. I’ve got some broccoli to use up, but this week’s meal plan is looking simple, tasty and achievable.

Brittany, would you believe that I bought the same type of mushroom last fall at my local market after the guy at the stand convinced me I just had to try reishi mushroom tea?! Once home, I got a bit intimidated by the idea and it took me months to actually get around to making it… I can’t wait to hear how yours turns out!

Just started to try meal planing. Tonight I made grilled shrimp with Parmesan risotto and green beans. Tomorrow I am going to try making a version of the pioneer womens “buffalo chicken salad”. I like not having to figure out what’s for dinner the day of…..
