I had a great weekend, which included bowling with friends.

It doesn’t matter who wins (Hint: it wasn’t the girls), because I had forgotten how fun bowling is!
I also forgot how delicious pancakes were, until I woke up Sunday morning NEEDING pancakes. The only problem? We were out of eggs. But I didn’t let that stop me.
Egg-less Pancakes
(great recipe title, no?)
First, gather the goods:
- 1/2 c white flour
- 1/2 c wheat flour
- 1 tsp sugar
- 1 tsp cinnamon
- 2 tsp baking powder
- 1 c milk
- 1 Tbsp veg oil
- 1 Tbsp water
- 1 tsp vanilla extract
- 2 Tbsp butter
- blueberries, nuts or any other mix in that you desire.
- Optional: for extra staying power, you could a couple scoops of protein powder to the mix. However, I wanted to eat again in a couple hours, so I decided to forgo the extra staying power 🙂
In one bowl, mix all the dry ingredients, and in another, all the wet. (Minus the butter- the butter stays out of the mix for now)
Then combine the two bowls and whisk together. The mixture should be slightly lumpy.
Heat a pan or skillet or griddle over medium-high heat. While heating, add the butter to the pan. Once it’s melted, pour excess melted butter into batter and stir.
Then, ladle the mix onto the griddle.
Add your blueberries…
Flip once you see bubbles appear, and cook until done. Serve with syrup!

You know, I have tried putting blueberries in my pancakes before and just mixed it in the mixture…but that makes more sense to just put them on top because it was a hot mess when I added them and mixed them in! Thanks for that tip!! 🙂

Wow, awesome eggfree recipe! I had to add flax egg to make them work before..but this recipe sounds great. Even better since I usually don’t have flax on hand.

I’ve been loving pancakes lately! We’ve been making them at least once a week. Blueberries and chocolate chips are great, but I’ve also been making pumpkin pancakes with butterscotch chips – awesome combo!

Oh funny! We had blueberry pancakes for dinner tonight! Ours did have eggs, though. Blueberries are my favorite add-in. I also like diced strawberries. My very favorite pancakes lately are made with oats, so good!

Mmmm, I want pancakes now! I like banana or blueberry pancakes, but do not cook them much since every time I do I can’t get them cooked right they are always over or undercooked, never just right!
