While browsing the ‘nets and nursing I came across 24 Things We Suddenly Become Obsessed with in Our Late 20s and chuckled my way through it. It’s eerily accurate. The proof is in the fact that on July 4th we celebrated with friends (pics to come!) and last night we sat out back, David reading and me, meal planning. Both were equally as awesome evenings.
I love that my mind thinks it’s Monday, but it’s really just Sunday, so I’m just swinging by to share a few meal ideas in case you are driving home from a wonderful weekend and meal planning in the car (another one of my favorites).
Brown Sugar and Bourbon Glazed Salmon with Roasted Broccoli, Baked Sweet Potato and Tomato Slices
Crockpot Whole Roasted Chicken over a Brown Rice Pilaf and Simple Salad
Taco-Seasoned Grilled Shrimp over Brown Rice, Refried Beans, Romaine, Red Peppers, Purple Onions, Cilantro, Avocado, Sour Cream, Jalapenos and Salsa
Gyro Burgers (I used Grass-fed Beef instead of Lamb and it was delish!) with a Simple Salad
Lunch of the week was another salad in a jar! Again, it stayed fresh through Friday. Impressed. I add cucumber to mine, but didn’t list it because I wasn’t wild about it.
Other possible extras: jalapenos, avocado (once you pour it out), tortilla chips.

I’m terrible at eye balling, how much rice and beans do you prep and how much do you think you use per jar? I would love to make this and have leftovers for the week.
How do you cook your black beans when you cook from dry? Any tips would be great, mine always split.

Great questions! I usually eyeball, so I’m guessing I used about 1/2-3/4 cup of rice and beans (mixed) per jar. I usually cook 2 cups of dry rice and use extra through the week in meals for H and me. If I am using dried beans, I usually use my pressure cooker so I don’t have to soak overnight. Mine always used to split, so I kept decreasing the cook time. Usually I pressure cook them on high for 8-9 minutes, then let them simmer in the pressure cooker if they aren’t quite there yet. Oftentimes they keep cooking even after draining, so I’ll drain them and sometimes rinse them in cool water to stop the cooking. Hope this helps some!

That shrimp salad look so good! We’re grilling up some shrimp for dinner tonight, but I wasn’t sure how I was going to season it yet. Maybe I’ll try it with taco seasoning!

Great meal ideas! The taco salad on a jar sounds good! On my menu is mahi mahi with pineapple salsa, rosemary chix with zucchini, BBQ chicken and burgers. It’s gonna be warm here so lots of grilling this week.
On the menu this week – grilled chicken with pasta 🙂 I had the hubby grill up lots of extra chicken (a usual Sunday task) so then we have fresh good meat to throw into various recipes and it keeps me from turning on the oven range so much and gets him involved in cooking even if just at the grill 🙂

LOVE that salad in a jar creation this week (I literally JUST took black beans out of the freezer before I sat down at my computer). And this whole thing would probably help keep my salad fresher than just leaving it in the fridge. It’s been wilt-city in that fridge lately!
