While browsing the ‘nets and nursing I came across 24 Things We Suddenly Become Obsessed with in Our Late 20s and chuckled my way through it. It’s eerily accurate. The proof is in the fact that on July 4th we celebrated with friends (pics to come!) and last night we sat out back, David reading and me, meal planning. Both were equally as awesome evenings.
I love that my mind thinks it’s Monday, but it’s really just Sunday, so I’m just swinging by to share a few meal ideas in case you are driving home from a wonderful weekend and meal planning in the car (another one of my favorites).
Brown Sugar and Bourbon Glazed Salmon with Roasted Broccoli, Baked Sweet Potato and Tomato Slices
Crockpot Whole Roasted Chicken over a Brown Rice Pilaf and Simple Salad
Taco-Seasoned Grilled Shrimp over Brown Rice, Refried Beans, Romaine, Red Peppers, Purple Onions, Cilantro, Avocado, Sour Cream, Jalapenos and Salsa
Gyro Burgers (I used Grass-fed Beef instead of Lamb and it was delish!) with a Simple Salad
Lunch of the week was another salad in a jar! Again, it stayed fresh through Friday. Impressed. I add cucumber to mine, but didn’t list it because I wasn’t wild about it.
Other possible extras: jalapenos, avocado (once you pour it out), tortilla chips.
