This was the first weekend it finally felt like spring. Translation: I could wear shorts (!) and my head was stuffed up from allergies. Totally worth it to be able to spend time outside! It’s good for all of us, especially Koda.
I take full blame that Koda hasn’t gotten as much exercise as she deserves lately, so I’m really focusing on fixing it.
Friday I took Hailey and Koda hiking. I walked through the woods singing my ABCs all loud and proud. I think it kept the bears (and all other hikers) away.
On the way home we swung by Josh’s Farmers market to grab dinner. I was so excited for my favorite sign of spring (farmers markets!) that I splurged on fresh scallops.
I baked them in a muffin tin so each scallop had its own sauce bath. White wine, garlic, butter, salt, pepper and a squeeze of lemon.
It was quite the Friday night feast!
Saturday we attended our neighborhood egg hunt. Last year Hailey sat on David’s shoulders and watched; this year, she got into it!
I had so much fun playing with her that I didn’t get a chance to catch up with friends as much as I hoped.
But it was just way too much fun watching Hailey hunt eggs and fill up her basket.
She hasn’t stopped playing with them yet.
The only downside? The return of the creepy Easter bunny!
No worries, we swooped in to rescue her.
It was such a beautiful day that we decided to skip the jelly beans and instead treat ourselves to a new bike seat.
Despite her somber face in the picture, Hailey loved it! So did Koda. I rode my bike while holding Koda’s leash and together we biked 5 miles.
It was a perfect family weekend. A lot of fun, a little exercise and really good food. I only used half the scallops Friday night, so last night we finished them up.
Gina’s lemony tomato herb scallops were AMAZING. I used fresh rosemary and dried basil and the dish was bursting with flavor. David absolutely loved it and I put it on my must-repeat list. The best part? It’s relatively simple. I highly suggest you try it!
What is the best thing you ate this weekend?
How many of y’all would answer Cadbury Egg?

Her facial expressions are the BEST! And yes, that Easter bunny is creepy…poor girl! We spent time with Vishnu’s family this weekend. His four year old cousin kept us on our toes the whole time!!

Aww, Hailey looked so cute in that Spring/Easter dress! And I cannot blame her for being afraid of the Easter bunny. Seriously, some of those really are creepy!!

So glad you rescued Hailey from that scary Easter bunny. Loved all the pictures–family & food. Great idea of the scollops in muffin pans, and I will definitely try both scallop recipes.

Is that a Voyager bike seat?? We are looking at buying one too! I would appreciate your review on it. 🙂

To be honest, I don’t even know what kind it is! …. ok, I just went and looked. It’s a Bell. We picked it up on a whim at DIck’s sporting goods. We wanted to see what she thought. If she continues to like it and for long rides, we might upgrade, but for now the $50 works really well! 🙂

Hailey has so many expressions – I love it. And that Easter bunny is ridiculously creepy.
We ended up having our Easter dinner on Saturday and it included fried chicken, mac and cheese and arugula salad. The best.

Those scallops look amazing. I love scallops, but I’ve actually never cooked them! I worry that I would mess them up. But it sounds like they aren’t too difficult to cook?!
