Well, we’ll see if I stay on track all day. 🙂 But I started off on the right foot!
Before I get to breakfast, let me tell you about last night. Hubbs didn’t get home until 9:00, and that’s why I had such a weird dinner. Some nights I just snack on whatever I can find when it’s just me eating. But Hubbs hadn’t had dinner and came home hungry. Since I hadn’t made anything, I pulled out whatever I could find for him to eat, which wasn’t much: A burger on an onion roll, a few crackers and carrots. He walked in and starting laughing so hard, then demanded I take a picture to post on the web. He wanted people to get a true look at what I feed him… I said it wasn’t a fair representation, but agreed to post his pathetic dinner. He said “I haven’t eaten since 11:00am and this is all we have to eat?!” I said, of course not, we have more to eat. I reached back into the fridge and pulled out my jar of olives. we both cracked up. Looks like I need to go back to the grocery store…
Anyways, this morning I was back into health mode! I chopped up some orange peppers, onions and my last Jimmy Dean turkey sausage.
I let all of it sizzle in a nonstick pan together, while I whipped together 4 egg whites and 1 whole egg. I cooked it all together, put 1/2 inside a wheat wrap with pepper jack cheese for HUbbs, and plated the rest for me, along with 1/2 a Sandwich Thin, a slice of watermelon and a sprinkle of Cabot pepper jack.
Breakfast… check! Can’t wait to see how the rest of the day goes… And thank you to Good Eats Girl, that said it’s normal to have ‘off’ days…. it made me feel better about myself 😉
PS- I’m flying to Chicago tomorrow for a weekend bachelorette party. I’ve never been there and am excited about it! Any restaurant suggestions in case we don’t have pre-planned reservations??

Lunch was at one of my favorite local spots… Field of Greens. It’s customized salads- YUM. I went with spinach, romaine, carrots, tomatoes, onions, chicken and feta cheese, with greek dressing on the side.
It came with a wheat roll. I ate about 3/4 of the salad and 1/2 the roll. It was a delish lunch on the run… now I’m off again.. busy afternoon! Hubbs is out of town tonight… I’m thinking about renting New Moon. I’m not very into the Twilight saga, but feel like I’m missing out. Have you seen it? Good or bad? Let me know! 🙂

I guess I got caught up in New Moon and forgot to post dinner 😉 Actually, I wasn’t that impressed with the movie. I thought it was better than Twilight, and Jocab certainly is a hotness monster, but the actual story didn’t grab me. I had multiple people to tell me to read the books though, so maybe I’ll do that instead 🙂
Anywayzzz…. dinner was quick and easy because I was exhausted. Frozen Palermo’s pizza. Yup… frozen pizza night… Hubbs isn’t the only one who treat himself while the other is away 🙂 I had their Greek thin crust pizza and it was pretty good… for frozen pizza. It wasn’t breathtaking, but I was hungry and it did the job. Topped off with olives, feta, artichokes, onions and a slight sprinkle of cheese.

I’m not embarrassed to tell you I ate a little over 1/2 of it either. Yup, half… it was really thin crust, give me a break 😉

Chicago sounds awesome! I’ve always wanted to go so I definitely can’t wait to see some pictures. I totally hate it when I can’t find anything to eat/make at home – normally I run my ass out to the 24-hour grocery store lol have a good trip! Miss you while you’re gone!

Grocery shopping seems like a task that can never be checked off the list. It just shows back up in a week or so! Have wonderful time in Chicago!
