I had an awesome weekend full of great friends, delicious food and even a bit of time for relaxing. David and I went to a couples baby shower, thrown in Baby D’s honor and it was a huge success! More details to come on Thursday.
And what is the perfect way to end such a fabulous weekend? Grilled corn!
Nothing tastes more like summer to me than vine-ripe tomatoes and delicious grilled corn, so when my CSA box contained both of these goodies, I couldn’t wait for Sunday night’s dinner!
Perfectly Grilled Corn
Not only is it delicious, it’s so easy. You will need:

a grill
-
corn
-
butter, salt and pepper
I took 4 ears outside to begin the process. I highly recommend doing this because it tends to get a little messy.
Take each corn and gently pull back the husk. Strip it of all its silky strands, but don’t pull the husks off completely.
Fold the husks back up around the cob. Next, soak each ear in ice cold water (containing a few good shakes of salt) for about 10 minutes.
Take the ears out, shake off the excess water and place them on the grill over medium heat.
Close the lid and let them cook for 20 minutes, rotating them every 5 minutes. Play with your puppy in the interim.
They’ll look like an icon of summertime when you take them off the grill!
I served mine up with some basil butter that I made with some softened Smart Balance and chopped up fresh basil.
And a glorious CSA tomato that was perfectly ripe.
All in all, a perfect summer meal!

In Mexico, they serve it with “crema” (almost like a sweeter sour cream), chili powder, and lime juice…they sell it on the street corners or at festivals, the way we might eat cotton candy. The MOST popular way I saw was “elote” where the corn was taken off the cob and mixed with butter, cheese, crema, and chile. Certainly not healthy, but VERY beloved. 🙂
Your tomatoes look beautiful…but seeing corn being shucked brings me back to days on the front stoop of my grandparents house shucking corn for EVERYONE. Oh, the pains of being a small child with limited abilities in the kitchen…

we grill tons of other vegetables but never corn. looks so good – must add that to the rotation.
and sliced tomatoes are one of my most favorite summer foods! love them with a sprinkle of salt.

Definitely drenched in butter, salt, and pepper. I remember dinners as a child where we’d bet on who could eat the most ears of corn. And then…who could eat an ear the fastest. The little things in life 🙂

Thank you for posting how to grill corn! I just wanted to grill some corn last week, but after I had such an AWFUL time trying to find out the best way to do it, I just boiled them.

I just had grilled corn on Friday… I normally don’t put anything on it, because it already so delicious and sweet!

Ate grilled corn just the other day. I boil it for ten minutes or so with husks completely removed. Then stick it on the grill to get a very slight char. I just eat it straight up plain and it is so good and sweet. Sometimes i’ll throw on some margarine when it is hot off the grill.

I LOVE grilled corn! We always had it growing up when I spent summers at the beach. Grilled corn just screams summer to me. So good!

Our neighbors grilled corn for us last July 4th and now it’s our favorite way to prepare corn – you pull the husks back, strip off the silk, rub the corn with softened butter (I like to add garlic salt and chili powder to the butter), and place the corn directly on the grill (without pulling the husks back up). Delicious!

Oh man I LOVE grilled corn! As a vegetarian, there isn’t usually too much I get excited about at a cookout, but grilled corn is SO tasty!
