After getting all worked up about not having plans, this low-key weekend ended up being quite wonderful and relaxing. Well, except for the Georgia/Tennessee game. That was in no way relaxing, but we pulled it out… barely. My heart actually still goes out to the Tennessee player who caused the touchback. Poor guy. And Marshall, too. Wishing him the best and a speedy recovery.
Ok, this is not a football blog. I apologize.
Let’s chat food?
We had a lovely Sunday, starting with an outdoor breakfast at Toast in Davidson. Hailey particularly loves this spot because of the apple butter, which she happily nose dives into. I can’t blame her. Their food is consistently delicious!
I got got wild and skipped my usual omelet for a combo. Mmm, blueberry pancake and crispy bacon!
After breakfast we decided there was no time like the present to start college tours.
They grow up so fast, don’t they?
We wore Hailey out so I got the treat of grocery shopping alone.
I love this triple threat. The Meat House offers incredible marinated chicken and meat options, Josh’s has locally grown produce at great prices and Target is just the perfect catch-all for everything else.
My favorite purchase yesterday were these fresh-off-the-farm eggs. Love the eggs, hate the container. I had to build these beauties a bed of towels to keep from creating an omelet in my backseat.
Once home I unloaded all my goodies onto the counter to admire. That’s normal, right?

I’ve noticed our pantry is a bit overloaded, so I’m trying to add in clean-it-out night once a week until it’s back under control. And as for the homemade guacamole? It was a brilliant addition.

We have lentil soup and grilled cheese on our menu too!!! Also, leftover roasted pork tenderloin and wild rice salad for tonight (I’ll come up with a veg), baked chicken cutlets with homemade mac and cheese and roasted broccoli, and throw in a mid-week date night. 🙂

I love admiring my groceries too. New food trumps new clothing always, right?! haha. I swear one of these weeks, I will actually plan out every meal. It might take me a year, but I’ll do it eventually! haha

You should be proud! Thy played a heck of a game. I think Tennessee is on their way back to being strong again. I hope so. I like Tennessee’s program. I want to beat them consistently of course, but still 😉

And lucky you on the eggs! Last week I went to get some from Josh’s and they were all sold out, except for double yolk. I wasn’t sure what I would do with double yolk. Then I thought, maybe they would make great scrambled eggs for the girls with all the protein and omegas?? hmmmm.. any thoughts?
my meal planning is totally thrown off, Jayson is out of twon or coming home late most nights, I don’t go too crazy. Plus, studying for boards and work load makes me shoot for easy meals… but ironically I was thinking of lentil soup bc I have a ton of left over green and red peppers from last week I need to use up!!

It’s supposed to help it from turning brown, buuuuut it really only helps for the area the pit actually covers 🙂 It’s just a habit for me now!
