Sweet and Spicy Rosemary Cashews

The flavor-packed cashews provide a perfect balance of sweet and heat, with the savory hint of rosemary that make them ideal for serving at parties or gifting to friends during the holiday season. Be warned, they will be gobbled up fast!


  • 1 lb (about 3 cups) raw cashews
  • 2 Tbsp butter, melted
  • 1 Tbsp maple syrup
  • 2 tsp salt
  • 1/2 tsp cayenne pepper
  • 1 Tbsp brown sugar
  • 2 Tbsp dried rosemary


  1. Preheat oven to 375.
  2. Spread raw cashews on rimmed baking sheet in a single layer. Roast for 10 minutes.
  3. While the cashews roast, Mix together the rest of the ingredients in a large bowl.
  4. Remove cashews from oven and dump into a large bowl. Mix well, while still warm, with butter and spice mixture until well coated.
  5. Spread the coated cashews back onto the rimmed baking sheet and roast for an additional 5 minutes. Remove from oven and allow them to cool.
  6. Serve immediately or keep in an airtight container.
