Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1/4 cup applesauce
  • 1 cup white sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 cup grated zucchini

Instructions

  1. Grease and flour a 8 x 4 inch bread pan.
  2. Preheat oven to 325 degrees F.
  3. Whisk together flour, salt, baking powder, soda, and cinnamon in a bowl.
  4. In a separate bowl, whisk eggs, oil, apple sauce, vanilla, and sugar together in a large bowl.
  5. Add dry ingredients to the creamed mixture, and mix well.
  6. Stir in zucchini until well combined. Pour batter into prepared pan.
  7. Bake for 50 to 60 minutes, or until toothpick inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
