When attempting to emulate yesterday’s day of eats, one might be smart to take a Beano beforehand. Unless you body is accustomed to bean and cruciferous vegetable overload, yesterday’s food might create a boatload of tummy bubbles.
It sounds cute when I say tummy bubbles, right? Forgive me, I have a child and use terms like tummy bubbles now.
Breakfast
1 dippy (or over medium) egg and half a Thomas’ whole wheat bagel with some avocado added in for creaminess.
A pilates class that kicked my butt. I’m crossing my fingers it doesn’t effect my afternoon wog today.
Post Pilates Snack
This. Is delicious. Like, realllly delicious. It’s multi-grain bread from the bakery, toasted, topped with a Morningstar Spicy Black Bean burger, Jenna’s cheddar jalapeno hummus, a sprinkle of feta and baby spinach. Seriously, I devoured this- YUM.
Second Lunch
After my doctor appointment (still evaluating BC options), I met Hubbs at Fusion Bowl. The hot and sour soup (without the crispies) was good. The lettuce wraps? Eh. Disappointing.
First lunch totally wins the gold medal in the lunch competition.
Afternoon Snack
Realizing I hadn’t had many veggies for the day, Hailey helped me whip up a tray of roasted cauliflower. I ended up chowing down on two bowls!
Dinner
I baked tortillas into fun shaped shells (FYI- the whole wheat MISSION tortillas contain partially hydrogenated oils, but Archer Farms/Target brand do not- score!).
Then filled them with homemade (in the pressure cooker!) refried beans, lettuce, corn and black bean salsa, scallions, shredded cheese, cilantro and avocado.
Looks pretty fancy, right? And it was delicious. We ended up turning round #2 into a dip and ate it with toasted tortillas.
And that wraps up another…
I’ve noticed my WIAW posts are always so long, because I’m much more of a mini-meals fan than 3 large meals.
How many people still eat 3 large meals?
Or are you a mini-meal lover like I am?
Lindsay @ The Lean Green Bean says
great tortilla tip! i need to be better about checking ingredients…sometimes i focus too much on the nutrition label
Brittany says
I’m all about the ingredient list! If I don’t recognize it, I don’t want it. But maybe I should remember to look at the ingredient list, too 🙂

Very nice eats indeed and great work on the training.

Love your food ideas! 🙂 So does my hubby… when I get the chance to try and redo them too. I love your picture of you doing Pilates… you’re just adorable. Keep up the good work Momma.

I’m all about the mini meals! I like that I get to graze throughout the day. My co-workers don’t understand why I eat all the time (every three hours). They like to starve themselves until their next meal. I will never understand that!
Keep up the good work and I love the pic of you and Hailey! 🙂

I eat 3 meals and 2-3 snacks a day. Although my snacks are quite large, so I guess I eat a bunch of mini meals!
Adria says
Thank you so much for sharing your recipes! You inspire me. I’m curious, did you make the black bean patties yourself? If so, could you please share the recipe?
Brittany says
I didn’t make them, they are Morningstar Farms Spicy Black Bean burgers- found in the freezer section. However, what a great idea to try and make them. Maybe I’ll work on that because they are SO good.
Gina @ Running to the Kitchen says
I eat 3 big meals and probably about 1-2 snacks a day when I’m home but if I’m traveling (for work), it’s way more snack based.
Btw- love that idea with the tortillas to create little bowls!
Lindsay@Fuel My Family says
I eat like 5 large meals a day, breastfeeding makes me ravenous! I’m sure you understand! I just made homemade tortilla chips te other night for a taco salad, maybe I’ll make a shell next time.
Brittany says
I totally understand. Some days I feel like I’m eating every 30 minutes. I don’t know how I’m going to scale it back once I’m done BF’ing because I like eating a lot right now!
Parita @ myinnershakti says
Love that torilla tip! When I make Mexican pizzas or tostadas at home, I crisp up the tortillas in the microwave – they taste like crackers!
Samantha @ Health, Happiness and Skinny Jeans says
I definitely prefer 5-6 smaller meals a day. I feel more energetic and I am less likely to over eat or snack on junk food!!

We visited Fusion Bowl last week and were also disappointed with our meals. They used to be SOOO good, bummer.

Great idea to crisp up the tortillas into fun shapes. I used bowls once, but haven’t done it since I wasn’t sure how oven safe they were!
I’m usually a 3 meals and a small snack or 2 kind of person. That said, some days I eat my breakfast in 2 parts or have an equally sized lunch and afternoon snack. I guess it depends on the day.
I try to just eat what I’m hungry for, the only problem I run into is after work. Lately, even if I have an afternoon snack I want another before dinner and before I know it I’ve kind of overdone it in the calorie department.
christina says
YES! I love avocado w/ eggs….mmmm! You and the baby look so cute in that pic! 🙂 So happy and sweet.
Jen says
i am a three square meals kind of girl.
egg and avocado is one of my favorite combinations and your dinner looks so creative and delicious!
Belinda says
I am a big snacker! I have breakfast, morning snack, lunch, afternoon snack, dinner and supper. I couldn’t imagine only eating three times a day – I’d be so hungry! 🙂
Kelli H (Made in Sonoma) says
I eat 3 larger meals and 2 in between snacks.
Your din DOES look fancy! 🙂

I’m a mini meal lover like you! But still I have problems with keeping a regular eating schedule. Need to work on this!
