It’s been a busy week! Monday we drove to Tennessee and back to check out a property we’re considering for a short term rental investment. It was a whirlwind 8 hours in the car (in which my kids were total screen zombies), but being a mountain girl at heart, just getting a chance to breathe in that Smoky Mountain air for a brief moment was invigorating.
Needless to say, I never could guess which day of the week it was correctly after that!
Anyway… do you guys ever keep a running list of things you want to talk to someone about? I do. I have post-its stuck on my desk that I have lists of things I don’t want to forget to talk with someone about, whether that’s David or a friend. Honey Chili Lime Marinade
I updated my go-to fajita marinade recipe because I felt it was pigeonholed in it’s category as only a Portobello mushroom marinade when it works beautifully for chicken, too.
Yesterday I marinated both chicken and Portobello mushooms in the marinade, then pan seared then chicken before placing it on a foil-lined making sheet with the mushrooms. I put them all in at 350 degrees convection, and they were ready to go about 25 minutes later. Delicious!

- History Storytime – this one is for the kids, though I have really enjoyed it as well! They are short (8-10 minute) episodes about historical events done by a father and his daughters that are very entertaining!
Hobbies
My reading has slowed down, though I do owe you a review of The Four Winds and Before We Were Yours. I have finished them both and am now listening to Maybe You Should Talk to Someone, which I’ve heard good things about. Once I finish it, I’ll give a review of all three! Have you read anything fantastic lately?
I finally bought some yarn yesterday and am making my grand return to knitting. Thank you, Youtube, for having excellent knitting for beginners content. This video about how to cast on was so simple to follow! Now, I’m just over here killin’ it…

I recently read Mom Set Free and loved it. Now I think I need to read How to Not Lose Your Sh with Your Kids. Three hasn’t been challenging at all (sarcasm). Love Joy CBD’s bath bombs! I need to order more soon! My husband loves their products now because of you introducing us.

Astray podcast is completely enthralling, but also disturbing, and talking about the so called “India Syndrome” (really just a theory) about Westerners’ obsession with spirituality seeking in India, leading to psychosis and/ or death. Most of it I’ve listened to while entering grades, so I’ll have to take a second pass at it since I missed many parts.

Two that I have loved for a while that I still do are The Popcast with Knox and Jamie and The Big Boo Cast with Sophie Hudson and Melanie Shankle.
