Spring means the days are longer, allowing for much better outside lighting for food. File this under blogger problems, but I always end up liking pictures taken on the deck a million times more than those snapped on the counter. With that being said… let’s jump right into last week’s meals! And as always, much love to Jenn for creating the WIAW link up!
Sunday– Crockpot pulled pork (simmered on low for 8 hours in this BBQ sauce) on top of greens and purple cabbage with roasted sweet potato fries on the side.
Monday– Giant spring salad using my new favorite power greens blend, cucumbers, strawberries, scallions, purple cabbage, carrots, blue cheese and Garlic Expressions dressing.
With whole wheat spaghetti, marinara and meatballs. One of my favorite pregnancy meals lately! Mmm… carbs.
Tuesday– Crockpot black bean soup (recipe coming this week!) and tortilla chips.
Wednesday– Chicken enchiladas with avocado and leftover black bean soup.
Thursday– A play on the layered fiesta bowl. This one contained homemade Spanish rice, red cabbage, scallions, Mexican-spiced shrimp, cilantro, red onion, sour cream and avocado.
Friday– A simple buffalo chicken salad featuring power greens, purple cabbage, scallions, blue cheese, grilled chicken, buffalo wing sauce and ranch dressing.
It felt too crazy off me to not eat pizza Friday night, so we made up for it with a large veggie pizza on Saturday after our full day at Tuckfest. Hit. The. Spot!

Very clever of you to make the black bean soup as a main earlier in the week and then pair it with the enchiladas. You’re a master at this meal-planning thing 🙂 The hubs is out of town for work this week, so since I don’t mind leftovers, I make up a bunch of sweet potato-salmon cakes yesterday for lunch, while the crockpot’s working on a lime beef stew for me. Excited for both!

I’m looking forward to eating our “regular” meals again after a week of vacation & eating out. It all sure is delicious & a nice break from cooking, but I’m ready to get back in the kitchen! I can’t wait for that black bean soup recipe!

Can’t wait for the soup recipe! We had a family get together yesterday featuring crockpot BBQ chicken (cheaper alternative to pork), so I’m excited to eat the leftovers throughout this week!

We have a deck this year, so I can’t wait to take food pictures on it!! haha
I also can’t wait to get into the habit of making fresh salads. I haven’t really felt the urge yet, but hopefully once the temps hike up, that will change!!
