I loved all the sweet comments on our anniversary post from yesterday. 2 years down, and a lifetime more to go 🙂
Unfortunately I wasn’t feeling 100% yesterday. I tried to shake the icky feeling by staying busy and even made it to the gym. I thought some movement might help, and I ellipticalled for 35 minutes. Proof:
It felt good, but still I felt off the whole day. I wasn’t up for going out to celebrate, so I decided to take an easy route and celebrate with sandwiches.
I sliced up topping options: tomatoes, green peppers, onions, spinach, hummus, goat cheese, cheddar cheese, turkey (for him), grey poupon and freshly baked (by someone else) sourdough bread. I have a slight obsession with sourdough. Delicious!
I always seem to forget what a fabulous dinner make-you-own sandwiches make, and Hubbs was more than happy to celebrate at home.
I got to work on constructing my masterpiece. Starting with 2 toasted slices of sour dough. I loaded one side with goat cheese while it was still hot so it would get melty ::crucial::.
Then came the veggies.
More veggies and a schmear of hummus.
And (ta-da!) dinner was ready! And placed next to a beautiful rose from my sweet Hubbs.
We enjoyed our creations on the newly stained back deck.
Where we watched the sun sink low.
A few other special touches made the evening a perfect 2 year celebration.

I think really good sourdough is one of my all-time favorite breads. So delicious and adds so much to sandwiches.

I am loving hummus sandwiches lately too. Hummus, veggies and loads of pickles or pepperoncini (banana peppers?) on thick grainy bread. Yum!

Your sandwich looked so good and I love the last pic of you it is beautiful. I was wondering if you had a particular brand of goat cheese you could recommend. There are several different ones at the store and since I have never bought goat cheese before I wondered if you could suggest one.

Hm.. I’m not sure of the brand, but I prefer the logs to crumbled.

YAY for baby bellies! I love getting to that point where there is no denying that I am pregnant. I tried to respond to your comments on my blog the last few times and I can’t respond to you 🙁 That sandwich looks AMAZING! Where do you get your cheese. Mmm! The make-your-own sandwich is entirely underrated. Sooo good, especially with a good dollop of hummus! I’m a bit obsessed with sourdough too…I swear it makes the perfect sandwich bread!
