No, nothing happened that was scary, but weekends like this, yesterday in particular, make me sit back, close my eyes, smile and be grateful for all my incredible blessings. Yesterday I had quite a few of those moments when I just took a deep breath, tried to soak it all in and contemplated asking God to stop time right then and there.
What was so wonderful about yesterday?

The weather was GORGEOUS. 72 degrees and sunny with a cool breeze.
The weather was perfect for a bike ride, so I obliged.
I’m a safety girl! Well, maybe not. I wear a helmet, but I’m not sure if jeans and flip flops are considered safety gear. I got in a 5 mile ride, and it was wonderful.
After a visit to the grocery, I did some baking (coming later this week), then headed outside for the afternoon.
It was so nice out that someone decided it would make a perfect day for the season’s first swim.
And then decided to take advantage of the low water levels… and got caught!
Hubbs chopped wood, trimmed trees and burned all the evidence…
while I kicked my feet up for a bit… and decided I need a pedicure… STAT.
We grilled out and I made a fun new side dish from Eating Well. However, I realized didn’t have all of the ingredients necessary, so I improvised…
so I sat outside and trimmed the green beans.
then sliced up the potatoes.
I tossed them both in 2 tsp of olive oil, spread of a baking sheet and sprinkled with salt and pepper before roasting them on the lower rack of the oven for 35 minutes, stirring half way through.
While they roasted, I prepared the “dressing”. 3 tsp olive oil, 3 Tbsp red wine vinegar (was supposed to be champagne vinegar), 1 Tbsp of Dijon mustard and 2 Tbsp finely chopped scallions.
Whipped together.
Then it got ugly… and delicious.
Once the veggies were out of the oven, I tossed them in the large bowl and coated with the dressing. I didn’t have any blue cheese crumbles, so I used goat cheese…. which melted and coated everything.
The result?
It wasn’t pretty. But it WAS really yummy!!
Roasted green beans and potatoes with goat cheese and dressing.
YUM.

Now I’m easing into Monday, still savoring the wonderfulness (it’s a word!) of the weekend!
