While the rest of the world is embracing pumpkin pandemonium, I’ve combined two incredibly unique flavors that are going to blow your mind!
Apple and Cinnamon!
Ok, ok, so it might not be the most novel combo there ever was, but it doesn’t stop them from being the perfect flavors for fall. These muffins just beg to be savored with a hot cup of coffee and a cozy, long-sleeved shirt.
These muffins taste decadent, but have a nutritional boost thanks to the addition of oat flour, which is incredibly easy to make.
All you need is some quick-cook oats and your food processor. It only takes 5-6 pulses before the oats turn into a course flour, perfect for added texture and added fiber.
By combining oat flour and whole wheat flour with the all-purpose flour, blood sugars won’t spike like they would with a traditional store-bought muffin.
The apples keep the muffins moist and pack a big punch of authentic fall flavor.
Bonus points if you can get the entire peel off in one piece.
Just kidding. Nobody likes a showoff.
