What {we} Ate Wednesday: Wknd Edition

I LOVED all the comments on yesterday’s oats discussion.  It made me feel better that I wasn’t the only one that finds the texture kind of creepy, but some of the comments have me considering giving them another try. We’ll see!

This W{we}AW showcases a weekend- so you guys can see that my healthy eating allows for a little more wiggle room depending on what the weekend has in store…

Breakfast

On these hot days, I’ve been loving smoothies! This breakfast contained 1 c original Breeze Almond Milk, 1 c baby organic spinach, 2 Tbsp PB&Co White Chocolate Wonderful, 1 small banana and a pinch of xanthan for thickening.

Morning Snack

After picking up this week’s CSA share, I wasted no time in digging in.  I knew my afternoon would be out and about, so I thought it would be a good idea to squeeze in some veggies while I could.

Cucumber, tomato, feta, fresh basil, s&p and a drizzle of balsamic was delish!

I also threw back my Juice Plus gummies (unpictured)

Lunch

Hubbs worked Saturday morning, but I met him afterwards at a friend’s house on Lake Hickory.  We grabbed some delicious Mellow Mushroom to split for lunch.  A Chicken and Cheese hoagie (no mayo) and Greek Salad.  Hubbs probably had a few more bites of the sub, and I had a few more bites of the salad.  Since Mellow doesn’t have nutrition info, lunch was my best estimate.

Mellow Mushroom quite possibly has my favorite Greek dressing EVER.  However, I don’t fool myself into thinking it’s healthy.  Instead I savor every scrumptious little bite.

Afternoon Snack

Despite the filling lunch, I eventually got snacky out on the lake.  Luckily, we came prepared.

Exhausted from a full day out on the water, we rushed home to try and beat the storms (darn storms!)  We decided to grab a movie and figured we’d try out the local BBQ place next door for dinner.

Wowza- they gave us a lot of food! We couldn’t finish it.

I ended up eating about 1/2 the pulled pork BBQ (delish), 3 onion rings with ketchup, 1 French fry (they were soggy by the time we got to them) and about 5 hushpuppies… LOVE hushpuppies.

Ew-vernight Oats

Good morning, friends, and good bye.  I’m about to be kicked to the curb- booted right out of the healthy living blog world. Why? One word: oats.

Let me explain…

I’ve been on a peanut butter loving streak lately and found myself with 3 almost empty jars of the nutty goodness.  I’ve always heard that empty peanut butter jars excite people because it means only one thing: overnight oats.

Let me first say that the sound of the mushy breakfast never appealed to me, but then again, other things have sounded odd (spinach in smoothies?!) and turned out to be delicious. So, I had to give it a try.

I gathered my arsenal.

Overnight Oat Ingredients And got started.  Into the empty jar went 1/3 c of dry rolled oats.

Oats in a Jar Followed by 1/3 c of almond milk and 1/2 the container of my beloved Chobani. (Side note: Dearest Chobani, I don’t blame you for the outcome)

Oats, Greek yogurt and almond milk in a jar I wasn’t getting anymore excited to try these out as I looked down at the mess in the jar, but like a good experimenter, I closed it up and stuck in in the fridge before bed.

Overnight Oats in the Fridge I woke up, ready for whatever awaited me.  Imagine my disappointment when I saw my breakfast.

Oats in a Jar in the Morning Doesn’t exactly scream ‘Come Eat Me! I’m Delicious!’, does it?  Again, green smoothies passed through my mind, and I decided to not judge an overnight oat by its cover. (That’s the way the saying goes, right?)

Overnight Oats on a SpoonI dug in.  It was exactly what I had expected.  A mushy gushy mess that squished around my mouth.  I stirred it more vigorously in hopes that the peanut butter would liven things up.  Barely.

I ate it all because it wasn’t nauseating (how’s that for a compliment?!), but let me say, I’m not ecstatic to give it another go.

I checked it off my food bucket list and called it a day.
