Breakfast

The bad. The better. The best.

The bad.

I’m bummed. Two days from now is Racefest, the 10k I’ve been training for. Unfortunately, I’m not going to be able to run (OK, wog) it because of some last minute work stuff with David. Instead, we’ll be gone and my little registration will be left in the dust. (Can you transfer registrations? If so, anyone want it??)

treadmill

I’m not sure what to do. I need to look and see if there are any other 10ks soon. If not, do I map and run my own? That sure sounds anticlimactic after the hard work I’ve put in. Any ideas?

The better.

The other day I introduced you to my baked banana oat cups.

baked banana oat cups

Well, I pulled the recipe off in order to tweak it. I got quite a few email and comments about the missing link, so I’m sorry I didn’t give you a heads up. The good news, though, is that I baked a new batch last night with a revamped recipe and now they’re an even better warm and delicious quick breakfast. David liked them, too, and thought they were even better reheated the next day. Note: if you’re saving them to eat throughout the week, you must freeze them after they cool. To warm up, simply wrap the frozen oat cup in a paper towel and nuke for 1 minute.

Anyway, the new recipe (and nutritional info) can be found HERE. Let me know what you think!

The best.

A few have asked for an update on Hailey’s eating adventures. To date, she’s eaten: avocado, broccoli, sweet potato, cheese, bread, raspberries, blueberries, mango, carrots, acorn squash, apple, cucumber, Greek yogurt, an olive, green beans, egg yolk, baked oatmeal and brown rice.

Most of the time I give her large pieces that she can handle herself, though other times (and with smaller foods like berries), I’ll pull off tiny bites and let her pull my hand to her mouth to “feed herself”.

It’s really been fun watching her discover new tastes. She makes some funny faces, but usually goes back for more. I think her favorite thing so far has been a strip of grilled cheese. She downed it! Overall, I’m focusing on as many veggies as possible, because of course she’ll like grilled cheese. She is human, after all.

Now off to the pile of laundry so we can repack it all again. Always an adventure Smile

Guess who is napping in the crib for the first time?!

IMG_2039

Yes, those are bumpers. Yes, I still have them in the crib.  I’m OK with it for right now.  The crib is part of this new schedule thing I’m trying.  At readers’ requests, I’ll be posting about it soon- a day in the life style, but today, it’s all about the FOOD.

Breakfast

Wheat Toast with PB, chia and honey

Wheat toast, peanut butter, chia seeds and honey.  It’s my new quick breakfast- fills me up and is easy to eat while holding a clingy baby.  Of course, no fall breakfast is complete without…

International Delight Pumpkin Pie Spice

a cup of decaf with Pumpkin Pie Spice.  Usually I buy Breve Cream, which is just cream and sugar instead of this stuff that has unrecognizable ingredients… but the pumpkin pie spice suckered me in… sigh…

Lunch

tuna and spinach sandwich with apple

No morning snack? Nope.  Somehow the morning flew by.  Oh that’s right. It flew by because SOMEone didn’t feel like sleeping… not a wink… I let her fuss a little while I finally made lunch.

Garlic and herb tuna and spinach on wheat, with sliced HONEYCRISP (drooooooooool) apple on the side.

Afternoon Snack

hummus and wheat thins

I was going to sneak in some more nutrients with carrot sticks, but after only 2 days, the carrots had turned slimy. EW!

Be honest… who is in the mood to go watch Ghost Busters now? ::timidly lifts hand and blushes::

Dinner

Guess who stopped by to meet Hailey? Uncle Chris!

IMG_2035

Hubbs’ bro was in town for work and made it over to meet his little niece.  I was so happy he was able to stop by! I was a bit tired (OK, a lot tired), so I snuggled with Hailey while the guys took over dinner duty.

So… it wasn’t surprising when dinner ended up looking like this:

steak and sweet potato fries

Is that a man meal or what? I didn’t even bother asking where the green stuff was :)   It was delicious, though.  Who doesn’t love sweet potato fries?

The guys didn’t stop there… dessert was in order, too.

angel food cake, caramel swirl ice cream and peanut butter chips

Angel food cake with caramel swirl ice cream and peanut butter chips.  This dish could be served in a restaurant. It was a-mah-zing. (Anyone watch Happy Ending? Penny? Anyone? ::crickets::)

When your boyfriend, husband, dad, guy friend is in charge of dinner… does it come out looking like a man meal, like mine did?

FALL into this Heavenly Breakfast Treat

October 4, 2011

October and these cooler temperatures motivated me to get into the kitchen and find some use for… you guessed it- PUMPKIN. Usually there is a backlash against all the pumpkin craze that happens in fall in the blog world, but trust me that this one is worth taking note of. I used this recipe as [...]

What I Ate…on my Due Date

September 7, 2011

Well, it wasn’t the muffins. Any other ideas? I’m quickly finding it difficult to focus on anything other than going into labor.  I know- it’s only one day past my due date, but it’s amazing how minutes seem like hours. Even my instincts are acting all funny. Proof? I’m not that interested in food.  Sometimes [...]

What {we!} Ate Wednesday: Greek Lovin’

August 31, 2011

Breakfast Ok, breakfast wasn’t Greek at all, but it was grrreat! I started the day off on the right foot with two banana nut oatmeal pancakes- toasted up and topped with 1 Tbsp peanut butter, 1 tsp chia seeds and some light syrup. These tasted just as delicious after being frozen and were incredibly [...]

What {we} Ate Wednesday: BH Edition

July 27, 2011

BH stands for Braxton Hicks contractions.  I felt them all day yesterday, which was something new to me.  It’s when your baby bump tightens up and is really hard for a minute before relaxing again.  They don’t hurt, but yesterday I seriously felt them the entire day, which was something new to me.  I actually [...]
