I was cheering for the Falcons yesterday, for which I feel like I need to apologize since my support of a pro team seems to be the kiss of death (Panthers super bowl circa 2016, the Packers circa two weeks ago, and now the Falcons). Congrats to the Pats though because wow, what a comeback! And hugs to my Falcon friends. Still so much to be proud of, so bring it again next season in the new stadium!
Now shall we return to a language that everyone understands? Like… how did your Super Bowl spread work out? No, not the points, the important one:
Boom. And this was before the ribs, BBQ, and buffalo chicken dip made their appearance. Our friends hosted a watching party. I love low key gatherings and this one was perfect. Lots of food, chatting, and a TV moved into the playroom for the kids.
Our contribution was wild and exciting: chips, salsa and guac. Just the essentials. Plus the most incredible cake balls you’ve ever seen; get your PIN IT finger ready…

So you see that stadium-shaped cake pan? So cute in theory, but in execution I could not make the cake not stick. I baked two different cakes then said screw it, we’ll turn it into balls. Unfortunately the only chocolate coating we had on hand were chocolate chips, which didn’t quite create the intended smooth, picturesque coating I was going for.
C’est la vie. Still tasty and the girls had fun helping (translation: licking the bowl).
The weekend overall was rather relaxing. I was in jammies by 4:00 pm on Friday, which was everything I thought it could be and more.
I ate some salads.
50% mixed green/spinach blend, strawberries, red onion, blue cheese, pine nuts, avocado
Took a nap. (!!!)
Went to church.

Saturday night we surprised my sweet friend, Cristy, with a girls’ wine night to help celebrate her birthday.
Capers AND goat cheese on a flatbread? This should be named after me.
You just can’t beat live music, wine, and girl talk.
Such a great group of ladies!
Now my grocery game is completely thrown off and I need to come up with something for dinner tonight, but I still have visions of buffalo chicken dip dancing in my head!

Buffalo chicken dip! It was so easy – and so delicious. I used unsalted blue corn tortilla chips for my dippers- the chicken dip was plenty salty on its own. The ingredients were – 1 shredded rotisserie chicken, 1 small bottle of Franks Red Hot, 1 cube of cream cheese, 1 cup ranch dressing, and cheddar cheese to sprinkle on top. Bake at 350 for 15 minutes.
So good, but so not-good-for you! But, every thing in moderation, right?!?

Oh my gosh YES. Buffalo chicken dip is THE BEST. I feel there are a million different ways to make it and every version I’ve tried has been incredible.

We didn’t watch the Super Bowl but we still had a super bowl inspired dinner of homemade nachos which I hadn’t had in over a year! They were quite the treat!

Love buff chick dip! Mmm! We were away from our sweet girl for the weekend so we just stayed home last night to watch the game. I definitely missed all the appetizers and desserts at the usual parties though!

I just went over to my neighbors for lasagna soup last night, & we watched the Super Bowl (we were rooting for the Falcons, too). I went home after Lady Gaga’s amazing half-time show & watched some Gilmore Girls on Netflix. Imagine my surprise when I saw all the Patriots comments on FB before going to bed. I was like wtf happened??? I thought of you & wondered if you were down in the dumps today. 😉
