This is my last crazy week before baby. I purposely left April much more unscheduled to allow for time to relax and prepare mind, body, soul, house and toddler for a new family member. At first I thought it was probably allowing too much time, but now I’m really looking forward to it. I can tell that pregnancy is really starting to sink in.
Yesterday morning I woke up with some pretty terrible back pain. I’m thinking it was linked to my extended driving, but whatever it was, it felt almost debilitating. No more car rides for me for a while! Still, when you have a toddler and the fridge looks like this:
you don’t have much of a choice but to get moving. I put on work out clothes, headed to the gym, and proceeded to use childcare for an hour to meal plan and catch up with friends. The gym is neck and neck with Target as to where I spot the most friends; I love it!
Hailey and I hit up Food Lion on our way home and I’m noticing their natural and organic options are growing.

After a little playing around and food prep, the fridge now looks like this:

Now to check out the dinners from last week:
Homemade meatballs (using grass fed local beef from the Bradford Store!) over spaghetti squash. Mixed super greens salad on the side.
Roasted Chicken, brown rice pilaf and field peas with salad.
Chicken tortilla soup thanks to broth and chicken from the previous night’s roasted chicken.
Homemade veggie pizza with more salad. Can you tell I was on a mixed greens, craisins, mushrooms and goat cheese kick? Top it with Brianna’s Blush Wine Vinaigrette and your taste buds will dance.
Dinner at mom and dad’s! Grilled lemon garlic salmon, sweet potato, squash and sautéed Swiss chard.
I’m feeling a little silly that there is pizza on my meal plan every single week. Without fail. What can I say, Fridays just scream pizza to me!

I’m glad you scheduled some slow-down time in April. Good thinking! As for a regular meal, it’s pizza here too. I try not to schedule it EVERY week, but pizza Fridays are definitely a thing!

Since you are really into healthy food and I saw that you used grass fed beef for meatballs, have you ever tried cooking with bison? I was really surprised to find out that Ted’s Montana sells their bison meat to take home and cook. They sell it ground or in steaks. Just another idea for a healthy meat option. I plan to buy some soon and cook it at home. It is kinda pricey though!

I have tried bison and LOVE it, but I can’t find it many places near me. And like you said, yes, it’s a little pricey. We don’t have a Ted’s Montana Grill near us, but what a cool fact that they sell it- I never knew that! Thanks for sharing!

There is nothing wrong with having pizza every week. Absolutely nothing!
I almost always have roasted veggies, grilled tofu, and quinoa on the menu. It’s such a simple meal that take less than 30 minutes to make. Love it.

We’re all about homemade pizza once a week as well! Another regular staple in our house is tacos, or some other Tex-Mex favorite.

We have some sort of chicken every week, it seems…it may be barbecued, greek, roasted or a variety of any other prep methods, but we have it at least once per week.
Funny, I have home-made pizza on my menu for this week on…wait for it…Friday! You are so right. Something about Friday makes me want pizza too! It’s probably a throwback to my childhood when I would have spend-the-night company, ans mom would get us Little Caesars and we would watch TGIF. Anybody else remember TGIF!? Full House, Family Matters…ah, those were the good ol’ days!

I remember loving getting asked to babysit on Fridays because once the kids went down I was all about TGIF! And if it was a Saturday, then SNICK was the best 😉 Ah, memories!

I have the same theme for dinners every week. A night of mexican, chinese (not take out), pizza (fridays), italian and fish. The recipes may be different but it makes planning recipes much easier!

Pizza is a big favorite at our house as well… and because I love breakfast, I generally pick one night a week to make breakfast for dinner. Often pancakes or some kind of egg dish, and bacon since that’s a must for my boys.

We do pizza every weekend, too! My husband usually grills it — and it’s so much better in the summer months when we have fresh herbs (umm I kill them in the winter). Glad you scheduled some downtime!

Every Tuesday is Taqueria Tuesday at our house!! We vary the menu between tacos, quesadillas, soup, fajitas, etc, but you always be sure there will be plenty of chips and homemade Guac! Tonight is Taco soup!

Glad you scheduled yourself some down time. Do you have anything planned to get Hailey ready, or to spend more time with her alone, before the baby comes?
I often think about what a different dynamic things are once there is a baby involved. And this is so fresh on my mind, bc my husband and I are hoping to start trying for baby #2 in the next few months.
As far as a food every week, pizza’s up there. We don’t do it every week, but we do it pretty frequently and that makes me happy. When we were kids we always did pizza days on Sundays, and I loved it bc we were allowed to have soda on that night too. It was the only day that anything but water or milk were drank. Sundays were always such a blast!

We eat Mexican food & pizza every week! We also eat a lot of deli sandwiches for lunch.

I’m really wishing I scheduled some slow down time before my bambino arrives. I’m thinking my body might force some whether I like it or not. 🙂 My hubby loves his mexican food so we usually have Mexican chicken, tacos, or fajitas at least once a week.

Your meals look yummy! The kids love turkey tacos so I do them or taco soup pretty often. A crockpot soup or stew is often on the menu plan as kids love it and its easy. I love sweet potatoes too so that is a common side around here.

One meal or rather snack I eat everyday is almonds and some carrot sticks. It’s just tasty and so easy to carry with you.
