I noticed recently that I had been overdoing it on bread. I don’t subscribe to any one particular way of eating, but I do know that less processed carbs (bread, pasta, etc) makes my body feel more energetic/less bloated. Having bread for breakfast, lunch and as a side for dinner was getting a bit excessive (I blame you delicious sourdough). So I’ve cut back a little this week and have been enjoying some new twists on meals.
I subbed out sourdough and replaced it with this sweet potato breakfast hash. It’s so dang good that I’m committing to roasting extra sweet potatoes for the next morning every time I make them for Hailey’s dinner.
This play on burgers and fries is kicked up a notch by adding guacamole for dipping and sprinkling the roasted chips with pink Himalayan salt (my new obsession- you can taste a difference).
Then there were these…
I wasn’t going to bake cookies, but I was watching a friend’s (adorable) little boy yesterday morning and when it’s rainy, we bake!
They are low-sugar and use dark chocolate and though the kids loved them, I think the recipe needs some tweaking.
I’m pretty proud of the above creation. Sure I might turn into a sweet potato, but roasting thick cut rounds until crispy proved to be an excellent substitute for buns with these pulled pork BBQ sliders. I used a vinegar-based sauce to cut back on sugar and a thick pickle because, well, YUM.
Then there are a few things I’ve seen recently that are now on my list to make…
First up, this crockpot applesauce. I can only imagine how delicious the house would smell!
This slow cooker tikka masala (I’m back on a slow cooker kick!)
I adore Cassie’s Beerthday Cake and will have to try this for David’s big day. I’m not super crafty, but man, that’s awesome.
